Of course it rains the one day we decide to do a satay event 😭 But we turned the butcher counter into a satay stand and we got through some 60 skewers and many many jars of peanut sauce and it was a blast! Thank you to everyone who popped by despite the rain and thanks @stellas.n1 for having us xxx taken in stellas_n1 by @mingweilow

This Sat! Your friendly neighbourhood satay uncle & auntie are popping up at your friendly neighbourhood butchers @stellas.n1 ☄️

We’ll be firing up the grill for chicken satay, marinated in our Peranakan paste and served with our new Satay Peanut Sauce. Eat it there, takeaway to the park, or grab some ready-marinated skewers and sauce to diy at home.

That was one crazy weekend at Kerb Goes East @kerbfood @urban_garden_fair 🔥

We had the BEST time serving up our silky smooth tofu pud in Canada Water last weekend. It was super duper busy in the best way possible and we couldn’t believe the amount of people who braved the scorching sun to stand in line for our tofu! THANK YOU 🫶

Huge thanks to the @kerbfood @urban_garden_fair team for organising the weekend and amazing to meet so many other traders at the market!

For anyone that missed it, don’t you worry, we’ll be trading again this weekend at @shotengai_market at @lowerstablestreetmarket @coaldropsyard.

Can’t wait to see you there! Now we better get back to the prep… 💪🧑‍🍳

The making of our NEW Satay Peanut Sauce @rempapaspiceco 🐒❤️‍🔥 I could cry with happiness! Here’s a little BTS from my camera roll.

I’ve been making peanut sauce for years, for countless supper clubs, popups and cookbook drafts. So I thought I had this nailed 🤨 But as all my recipe developer/ maker friends out there would know, the recipe itself isn’t actually the hard part. The hard part is turning that yummy homemade sauce recipe into something safe, consistent and scalable enough to sit on a shelf.

Suddenly you’re thinking about balancing water activity and pH instead of just whether it needs another squeeze of tamarind. You’re geeking out over the shade of brown your roasted peanuts are. Your spreadsheets multiply into v8, v9, v9.1 tabs @mingweilow 🤓

Then comes scaling. One of the things I love about Southeast Asian cooking is how intuitive it is. You fry a rempah until it smells right, until the oil separates, then taste and adjust as you go (aka ‘agak agak’ 💁🏻‍♀️). But once you’re making 100 kilos instead of dinner for two, you need a recipe you can measure and repeat. A rempah behaves differently in a brat pan than it does in the saucepan on my hob. The volume changes cooking times, the amount of oil needed….Then there’s finding a production kitchen willing to handle peanuts, which, in the UK, is ridiculously difficult.

Then comes the fun part: feeding it to people. We tested this sauce on our families, friends at every barbecue and potluck we could carry satay to, guests at our supper club with @bombom_everywhere, strangers at the @nourishedcommunities food festival, even the Indonesian embassy (eeks) at our friend @lisakinglondon’s batik show. Every feedback got us a little closer with the next batch.

So yes it took us longer than expected to get the recipe just right, but hopefully we’ve still caught the height of summer😊 Made with deep roasted peanuts (not pb!) for maximum nuttiness, then simmered with tamarind, lemongrass, spices and dark raw sugar.

Now up on the @rempapaspiceco website, and with a bit of luck it’ll be on a few shop shelves soon too. Hope you like it xx by @mingweilow

Nothing quite like a @tofufun_ market day!

We had such a FUN weekend selling our silky smooth tofu pud at @shotengai_market in @coaldropsyard. We were blown away by the fact that so many of you travelled specifically to the market (even from outside of London) to try our tofu! Thank you so much 💖

The weekend wasn’t without drama though as we ended up having to chuck about 60% of our tofu on day 2 due to a fridge issue. As always, we learnt SO MUCH from this weekend and all the late nights and early mornings of prep are worth it to meet you all!

We’re already excited for the next event which will be @urban_garden_fair @kerbfood in Canada Water on 8/9 August and then we’ll be back at @shotengai_market on 15/16 August.

TOFU FUN’S FIRST MARKET STALL ✅✅✅

We’ve had the most insane weekend trading at @shotengai_market for the first time ever. This was our first ever market and we spent a lot of time thinking through our logistics and how we could operate in a street food setting without fridges / running water / sinks etc.

It’s been an EXHAUSTING few days but we are over the moon with how the market went and the reception for our silky smooth tofu pud.

Thank you to everyone who came to @shotengai_market specifically to try our tofu. If you came, let us know what you thought of our product and if you’d like us to make it a more regular slot! 👀

@tofufun_’s 4th pop up = DONE ✅✅✅

We are beyond grateful to everyone who showed up to our pop up at @zaoancollective the other week.

We sold over 400 portions of tofu which is our biggest day of sales yet!!! Truly insane 🤯

Huge thanks for everyone for being so patient with the queues. We are going to keep working hard to make our service even slicker next time.
