A summer roundup, approximately three months late 😅

Summer is always a slightly funny time to be selling curry paste. Everyone wants salads while we’re over here saying BUT HAVE YOU TRIED THIS WITH AUBERGINES. But it’s been a busy one in other ways!

We’ve done food festivals: A three-day marathon at Celebrasia @batterseapwrstn @kmpresentsuk, and earlier in the summer with @nourishedcommunities. Celebrasia was particularly special because we got to spend three days surrounded by so many fellow Southeast Asian makers and friends. We were kept going by kaya toast with the legendary @madam.changs.kaya, hand-delivered pandan cakes from @grungeee @koee.london and curry puffs @oldchangkeeuk 🫰

We’ve taken the curry pastes on the road: Making fish curries at @moxonsfreshfish and satay at @stellas.n1, and headed to Somerset to cook with @pingcoombes and @somerset.foodie and show them what you can do with a good rempah ✌️

We’ve also been busy behind-the-scenes: Heading to an export fair to start thinking about getting Rempapa beyond the UK, and heading to TikTok HQ as two old millennials to learn about TikTok Shop (now live🤞)

Now bring on the jumpers and curries!

SAVE THE DATE! We’ll be BACK at this year’s Celebrasia Festival @batterseapwrstn 11-13 Sep ❤️‍🔥

You can find us at the Artisan Market (Turbine Hall B) alongside many other brilliant maker friends. Come get a curry shot and hopefully a jar or six! We’ll be bringing our full range of curry pastes, sambals, coconut milks andddd our new satay peanut sauce 💪🏻

Also happening over that weekend: The best of London’s street food stalls, chef demos, live music, dj sets, everything from traditional weaving to workshops for the kids. See you there???

Of course it rains the one day we decide to do a satay event 😭 But we turned the butcher counter into a satay stand and we got through some 60 skewers and many many jars of peanut sauce and it was a blast! Thank you to everyone who popped by despite the rain and thanks @stellas.n1 for having us xxx

This Sat! Your friendly neighbourhood satay uncle & auntie are popping up at your friendly neighbourhood butchers @stellas.n1 ☄️

We’ll be firing up the grill for chicken satay, marinated in our Peranakan paste and served with our new Satay Peanut Sauce. Eat it there, takeaway to the park, or grab some ready-marinated skewers and sauce to diy at home.

No tickets just rock up. 11am until we sell out xxx

That was one crazy weekend at Kerb Goes East @kerbfood @urban_garden_fair 🔥

We had the BEST time serving up our silky smooth tofu pud in Canada Water last weekend. It was super duper busy in the best way possible and we couldn’t believe the amount of people who braved the scorching sun to stand in line for our tofu! THANK YOU 🫶

Huge thanks to the @kerbfood @urban_garden_fair team for organising the weekend and amazing to meet so many other traders at the market!

For anyone that missed it, don’t you worry, we’ll be trading again this weekend at @shotengai_market at @lowerstablestreetmarket @coaldropsyard.

Can’t wait to see you there! Now we better get back to the prep… 💪🧑‍🍳

The making of our NEW Satay Peanut Sauce @rempapaspiceco 🐒❤️‍🔥 I could cry with happiness! Here’s a little BTS from my camera roll.

I’ve been making peanut sauce for years, for countless supper clubs, popups and cookbook drafts. So I thought I had this nailed 🤨 But as all my recipe developer/ maker friends out there would know, the recipe itself isn’t actually the hard part. The hard part is turning that yummy homemade sauce recipe into something safe, consistent and scalable enough to sit on a shelf.

Suddenly you’re thinking about balancing water activity and pH instead of just whether it needs another squeeze of tamarind. You’re geeking out over the shade of brown your roasted peanuts are. Your spreadsheets multiply into v8, v9, v9.1 tabs @mingweilow 🤓

Then comes scaling. One of the things I love about Southeast Asian cooking is how intuitive it is. You fry a rempah until it smells right, until the oil separates, then taste and adjust as you go (aka ‘agak agak’ 💁🏻‍♀️). But once you’re making 100 kilos instead of dinner for two, you need a recipe you can measure and repeat. A rempah behaves differently in a brat pan than it does in the saucepan on my hob. The volume changes cooking times, the amount of oil needed….Then there’s finding a production kitchen willing to handle peanuts, which, in the UK, is ridiculously difficult.

Then comes the fun part: feeding it to people. We tested this sauce on our families, friends at every barbecue and potluck we could carry satay to, guests at our supper club with @bombom_everywhere, strangers at the @nourishedcommunities food festival, even the Indonesian embassy (eeks) at our friend @lisakinglondon’s batik show. Every feedback got us a little closer with the next batch.

So yes it took us longer than expected to get the recipe just right, but hopefully we’ve still caught the height of summer😊 Made with deep roasted peanuts (not pb!) for maximum nuttiness, then simmered with tamarind, lemongrass, spices and dark raw sugar.

Now up on the @rempapaspiceco website, and with a bit of luck it’ll be on a few shop shelves soon too. Hope you like it xx

TOFU FUN’S FIRST MARKET STALL ✅✅✅

We’ve had the most insane weekend trading at @shotengai_market for the first time ever. This was our first ever market and we spent a lot of time thinking through our logistics and how we could operate in a street food setting without fridges / running water / sinks etc.

It’s been an EXHAUSTING few days but we are over the moon with how the market went and the reception for our silky smooth tofu pud.

Thank you to everyone who came to @shotengai_market specifically to try our tofu. If you came, let us know what you thought of our product and if you’d like us to make it a more regular slot! 👀

If you missed us, make sure to follow along for more updates of where we’ll be next!

Back in my chef’s apron! The last time I did a supperclub I was waddling around with a bump. Who better to get back in the kitchen with than my old pal Seji @midnightsnackseoul @bombom_everywhere 🫰🏻👯‍♀️

Seji and I first met years ago when we launched into Whole Foods together. I was a one-woman show feeling like a complete imposter, when she came over to my sampling table to say hi. I remember feeling so relieved I wasn’t the only one winging it. She’s now based back in Seoul and I’ve really missed my moaning partner, so when she asked if I wanted to cook together again, the answer was obviously yes.

I’d forgotten how much work supper clubs are… but also how much fun they can be! Last Saturday was such a joy, seeing Korean and Singaporean flavours come together on one table: sambal dolloped over galbi, nonya achar in between fresh kimchi in ssam. I love that. That’s how food and cultures should be shared 🥰

It was also such a joy to feed so many familiar faces: old friends, customers from our market days, and buyers who have taken a punt on our sauces. Thank you for coming hungry 🙏🏻 and thank you to @mingweilow @susieeatslondon for their help 🙏🏻

P.S. A lot of these recipes are in our books, or come together very easily with our sauces, ahem. Just dm or comment if you want to recreate any of the menu at home xx
