Bununla birlikte, Sürdürülebilirlik Yıldızı 🍀 ile onurlandırılmak, bu gururu daha da anlamlı kılıyor. Bu ödül yalnızca mutfağımızın değil, doğaya adanmış yaşam tarzımızın ve değerlerimizin de bir yansıması.

Bundan 15 yıl önce bir hayalin peşinden yola çıktık. Doğanın içinde, kendi emeğimizle kurduğumuz Casa Lavanda’nın bugüne gelmesinde, dostlarımızın ve misafirlerimizin desteği gücümüz oldu.

Birlikte paylaştığımız sofralar ve uzun sohbetlerle Casa Lavanda yaşamı bizim için anlamını buldu. Yıllar içinde Casa Lavanda bir otel olmanın ötesine geçti, sevgiyle büyüyen kocaman bir aileye dönüştü.

Bugün 15. yılımızı kutlarken, kalbimizdeki en heyecan verici dilek, gelecek yıllarımızı da hep birlikte mutlulukla kutlamak.

What began as a dream in nature has, over 15 years, turned into Casa Lavanda — a place shaped by our hands and your hearts. Amid nature, with our own hands, Casa Lavanda grew. Şile’den Urla’ya uzanan bir buluşma, Casa Lavanda’nın yaratıcı ortaklarından Şef Emre Şen’in misafirliğiyle bu kez Teruar’da.

Doğayla, mevsimle ve üreticiyle kurdukları yakın ilişkiyi kendi mutfaklarında farklı biçimlerde ifade eden Şef Emre Şen ve Şefimiz Osman Serdaroğlu, yalnızca bu gece için birlikte hazırlayacakları özel bir menüde bir araya geliyor.

Şile ve Urla’nın farklı ürünlerinden, iki şefin kendi bahçelerinde yetiştirdiklerinden ve doğadan topladıklarından beslenen bu menü; farklı mutfak hafızalarının ve ortak değerlerin bir araya geldiği, her iki şefin de kendi dilini taşıyan bir buluşma.

İlk sofranın tadı damağımızda, sohbeti aklımızda kaldı.
Geçtiğimiz hafta ilk kez kurduğumuz Günübirlik Meyhane sofrasında, sonbahar bahçesinde uzun bir öğleden sonrayı; Şef Emre Şen’in hazırladığı tabaklar, kadehler ve uzayan sohbetler eşliğinde paylaştık.

Çok keyif aldık, yeniden buluşmak için de fazla beklemek istemedik. 11 Ekim’de yeniden buluşuyoruz. Biyodinamik bahçemizden ve yerel üreticilerden gelen mevsim ürünleriyle şekillenen soframızda, sonbaharın tadını bir kez daha birlikte çıkarmaya davetlisiniz.

We had the pleasure of welcoming Chef @alvclv of @elchato_rest to Casa Lavanda for a four-hands dinner with Chef @mresn .
Two kitchens shaped by very different landscapes came together through a shared respect for biodiversity, local producers and the ingredients that define where they come from. The result was a menu created for one night only, carrying traces of El Chato’s Colombian roots and Casa Lavanda’s home in Şile in every course.
Our heartfelt thanks to Álvaro Clavijo and the El Chato team, and to everyone who joined us around the table for this very special evening.

On September 1, El Chato’s founder and chef Álvaro Clavijo joins Chef Emre Şen at Casa Lavanda for an exclusive four-hands dinner.

From the Amazon to the Caribbean, Clavijo’s cuisine draws on Colombia’s extraordinary biodiversity and his close relationships with farmers, fishermen and foragers. For this special evening, his distinctive interpretation of Colombian ingredients will meet Emre Şen’s nature-led cuisine, rooted in Casa Lavanda’s biodynamic garden and the local produce of Şile.
