Last year as we were working on the Apollo cookbook Frederik was planning his new as yet unnamed restaurant. We had spent months talking about how we wanted the non recipe part of the book to capture the spirit of Apollo in different mediums - art, photography, design, music. On the last day before going to print August Rosenbaum sauntered in, sat down at the out of tune PH piano and played a composition that was his way of expressing Apollo and what it meant to him.
When he finished playing we were in tears. What’s it called? Daphne.
Frederik had found the name of his new restaurant.
Apollo closes today and Daphne already has a spirit of its own. A laurel branch passed between the two.

Postscript. August had been at Danish Academy in Rome before he composed Daphne. It’s near Galleria Borghese, home to Bernini’s sublime Apollo and Daphne. taken in Kunsthal Charlottenborg by @msjeniporter

Making a new magazine is a revolution, making volume XV seven years later an evolution.
When @mette_barfod_ @s__g__l and I got together earlier this year to plan Ark XV we agreed that we wanted to take @arkjournal to the next level: aesthetically in the way we shoot and show features as well as in the overall design of the magazine and editorially in depth and breadth, and substance.
I’m so proud of what we achieved, working with such amazing contributors and subjects, and can’t wait for the issues to come. taken in Copenhagen, Denmark by @msjeniporter

So happy to see our book ‘Apollo:State-of-the-art-cooking and a party’ out in the world.
It was made with passion, energy and joy which I think you can feel. The continuation of a 12 year conversation between @frederikbillebrahe & me, and a wonderful new friendship with & respect for @nahmnahm & @kuralmaa.
Big thanks to our publisher @robbiewhitehead & friends at @apartamentomagazine for their patience & trust.
Tiramisù for 60 people might be my favourite dish & a symbol of the generous spirit of the book & its subject, Frederik who now flies with a Palestinian tray in case there’s a party. taken in Apollo Bar by @msjeniporter

Not sure if I’ve ever done so much research for an interview but then again. It was Alvaro Siza in his studio in Porto. A truly amazing, Inspiring and uplifting experience talking about what he calls the slow art of architecture or transforming reality. Coupled with a deep Siza immersion - tea house to tidal pools, family home, bus stop, even a marble chaise. And his House of Architecture at Serralves Museum.

Frederik & I have been talking about making a recipe book for years but the time was never right. Then things went wrong and somehow it felt right... Well done my friend @frederikbillebrahe & thanks team @apartamentomagazine & @masanaohirayama ........... (@get_repost)

We did it. Finally my first cookbook is here, it's not what I expected it to be but it's even better. A project of pure creativity made from the heart in a time of crisis that gave me the rare gift of time and clarity of thought.
