Amber White Mandi

Use 1 kg chicken with skin and make slits on it.
Add:
* 1 tsp cardamom powder
* 1 tsp fennel seed powder
* 1 tsp cumin powder
* 1 tbsp pepper powder
* Salt as needed
* 2½ tbsp yogurt
* 1 tsp honey or jaggery
* 2 tbsp butter
* 1 tsp olive oil
Mix well and marinate the chicken for at least 1 hour in the refrigerator.

In a steamer, pour water according to the rice quantity.
* 1 cup rice → 1½ cups water

This water is used for steaming the chicken, and later the same stock water will be used for preparing the rice.

Place the marinated chicken over the water and cover properly.

Once steam starts coming:
* Keep the flame low
* Steam for 1 hour 15 minutes

Wash and soak white long-grain basmati rice for 30 minutes. Drain and keep aside.
Do not use cella basmati rice. Use white long-grain basmati rice only.

In oil, splutter:
* 2 cinnamon sticks
* 9 cardamoms
* 8 cloves
* 1 tsp cumin seeds
* 2 bay leaves
* 1 piece mace

Add:
* 4 green chillies (not spicy)
Then add the stock water collected from steaming the chicken.
Since some water would have reduced during steaming, complete the remaining required quantity with milk.
Add salt.
Once it starts boiling:
* Add the soaked and drained rice
* Add a few more mild green chillies
* Cover and cook
Serve hot

NB: If you don’t get mild green chillies, replace them with capsicum.
If you prefer the chicken spicier:
* Add some green chilli paste along with the pepper powder while marinating.

Final Chicken Finish (Optional)
After steaming, if you want a grilled color on the chicken:
* Apply your preferred color marination
* Grill in a pan, oven, or air fryer for about 5 minutes

A taste of old Malabar. Before the biryani era, Thengachor was the king of festive tables—traditionally served with beef, dal, and moru curry. Simple, wholesome, and full of nostalgia.

ഓണാശംസകൾ 🌸
Pazham Nurukk
I came across this Thiruvonam breakfast tradition on Instagram, where ripe banana is prepared this way in some parts of Kerala. ❤️

This was actually my first time seeing it, making it, and tasting it — and honestly, I loved it! The taste reminded me of the chakka varattiyathu my mom used to make. Maybe it’s the combination of jaggery, cumin and cardamom that gave me that familiar taste.

For this, ripe plantain is cut into big pieces, cooked with a little water, and then mixed with jaggery, salt, ground cumin and cardamom. Once it dries a little, coconut milk is added and everything is roasted until thick and beautifully caramelised.

Serve it with pappad! 🤌🏼✨
