If you have been struggling with what sauces to buy to cook good Asian food that actually has flavour, you need these! 🥢 Today I am talking about Chinese Cuisine specifically. I felt like going cuisine by cuisine can really help understand what to use where and I can tell what I have learnt over the years. Chinese cuisine is huge with several provinces having their own style of cooking SOY SAUCE- There are two types, light and dark, light is for flavour mostly and dark is for colour. There is a hugeflavour difference you will see. It has the umami we talk about apart from being salty. Most local soy sauces are just salty without any flavour because they are manufactured in about a month with no time to ferment the sauce. So they longer the fermentation, deeper the flavour. OYSTER SAUCE - sweet , salty, savoury As the name says, yes it is made with oysters but is well balanced and does not taste like oysters. It is gelatinous in texture and you can use this in stir fries, fried rice, noodles, anything. Sweet , salty and umami flavours. One bottle will easily last you 6 months if you use it ocassionaly. A vegetarian alternative is shiitake mushroom flavoured oyster sauce. DOBUNJIANG- spicy, salty, savoury This is another sauce which is not commonly used in regular stir fries unless you want to make it spicy. Its used mostly in Sichuan cuisine which uses a lot of spice like sichuan peppercorn and is fiery red. Think of Mapo Tofu, Dan dan noodles, Kungpao chicken. Chilli oil is a key component of this cuisine. This sauce is made from fermented broad beans and chillies. It has a lot of flavour too and if you want to add spice to you chinese food, used this along with the other sauces. XO SAUCE- Sweet, smoky, salty It has completely different rich flavour profile and is considered something a little more indulgent due to its presence of seafood. A good XO sauce will cost you. WHITE PEPPER- softer subtle taste, used in lighter coloured food. Sharper spice whereas black pepper is more earthy There are many more like Hoisin sauce, plum sauce, chinkiang vinegar, shao xing wine that are used but this should do if you are getting started by @mybutter_half
