big cutlet little salad ep 1🧚‍♀️ pretzel coated chicken cutlet w/ a shaved brussels sprout salad

whenever i don’t know what to make for dinner, i usually default to some type of cutlet and salad situation. i thought it’d be fun to share some of the endless variations and boom this series was born 🐣

i reallllly loved this one, it felt super seasonal and autumnal without any fall herbs/squash/etc. recipe for the salad is up on substack !

i’m thinkin a pork cutlet of sorts for the next installment 🤔

honeynut squash vodka sawce !!! with fall chili crunch ❤️‍🔥

@williamssonoma sells a version of this chili crunch and @wishbonekitchen used to have a recipe for it, but i usually just throw it together based on vibes and it’s delicious every time. but the true star of the show is the pasta, specifically the sawceeeee 🤌🏼

ravioles du dauphiné but make it 🍂fall🍂

roasted butternut squash, brown butter, crème fraîche, parm, and nutmeg filling. finished in brown butter and sage

i was getting a liiiiitttleee frustrated when forming these because i kept introducing air pockets when trying to seal the pasta sheets, but for a first attempt without a mold i think they turned out pretty good. we crushed about 5 of these for dinner so safe to say they tasted gr8 :-)
