-¼ cup grated parm
-¼ cup pistachios
-zest of ½ lemon
-1 tsp salt
-4 tablespoon California Olive Ranch EVOO

For the sandwich:
-Bread (ciabatta, focaccia, or baguette recommended)
-Pistachio pesto
-Mortadella
-Ricotta
-Crushed castelvetrano olives
-Salt & pepper, to taste
-Califoria Olive Ranch EVOO

Directions:
Place all pesto ingredients in a blender and blend until smooth.
Spread layer of pesto on half of the bread and top with mortadella and crushed olives. Spread ricotta on the other half of the bread and top with salt, pepper, and a hefty drizzle of EVOO. Place the ricotta half on top of the mortadella half and enjoy!
