To all the lovely people who have encouraged me to create a cookbook all these years, at last, it’s here!

‘Nandên’ meaning kitchen in Kurdish, is a book full of stories from my life, memories of my family and the food I grew up with, especially in the Pishdar district. Most of these recipes were cooked by my grandmother and aunties and so it has been an emotional and wonderful journey as every line of each story took me back to my childhood, from the mountains of Qandil to the mound of Qaladze, where I grew up, played, foraged, enjoyed picnics, even while facing conflict.

This is my first ever cookbook and I’m so proud to have the opportunity to represent Kurdish food. It’s been such a pleasure to share my own experience of the foods I have encountered and share them with all that want to have a better insight into Kurdish cooking.

We’d love to thank Ryland Peters & Smalls who have supported us in creating this beautiful book, helping us make something that we are so very proud of, and to the amazing photography of Clare Winfield (@clarewinfield)and food stylist Kathy Kordalis (@kordalisk).

And to my wonderful assistant Amal Khalidi (@amalkhalidi_ ) who helped me through the process.

The book is available to pre-order now, if you click the link in our bio! As a debut author, pre-orders are very important to support me in the beginning of my food writing journey and supporting stories from our underrepresented culture.

Nandên out March 2026.

Born in South Kurdistan, Pary Baban was forced to flee her home village of Qaladzê, resulting in a nine day trek across Kurdistan where she learned to cook by collecting recipes from the people she encountered.

Pary lost her cherished recipe book but was able to find it 30 years later, inspiring her to start a restaurant, Nandine, in South London.

Once again our lovely neighbours @quincetreecoing have delivered us some quinces from their recent harvest. Grown in the streets of Camberwell and just a stones throw from our Vestry Road location. 🌳Thank you so much.

Last time I made some delicious Quince Jam, and I’m looking forward to making some more this weekend. Leave me a comment and let me know how you’d like to see me use them 🥰

Yesterday evening we had the pleasure of hosting @angymao.mao for an evening of dinner with friends celebrating her time in London!
This was a special one for us at Vestry as Angie used to work as a chef in our kitchen, so it was lovely to cater for her and friends for a farewell dinner. 💐
From all of us at Nandine we wish you the best in your new adventures, and we will always be a home for you!

🥂

Vestry Road is now available for large bookings and private hire to join you in celebrating any occasion! Send us a DM or email: nandencatering@gmail.com 🌺 by @nandineuk

On day 3 of our Kurdish food tour in London, we were still not very hungry from day 2 and also tired 🤭, so day 3 has one stop only.

For our last stop we decided on the other branch of Nandine’s since Pary Baban is on a league of her own and we wanted to try more of her creations. We were impressed once again.

This was our first Kurdish food tour, we enjoyed trying many restaurants, letting the wider community know of Kurdish cuisine and where you can eat it. Kurdish identity, including our food has been oppressed and denied. Like every group who grow and cook their food Kurds have their own unique cuisine, to deny this is ludicrous.

Day 2 of our Kurdish food tour was in South of London since there were many options

We started with breakfast at Nandine’s at Vestry Rd. Expecting only 1 option of Kurdish breakfast but found there were several to choose from.

You have to try it

The Nerve weekend dish: @nandineuk’s @pary.baban’s Tarêh Kurdi – Slow-cooked Lamb & Butter Bean Stew

“My first memory of this dish is from 1988 when I first visited one of my father’s cousins and his wife who was from Mahabad. She cooked this beautiful dish for us on a wonderful late spring evening”

Recipe 👇

INGREDIENTS (serves 6)
250g dried butter beans, soaked overnight
3 tbsp rapeseed oil (or any of your choice)
250g lamb (can be neck or chop, it’s up to you, but use meat on the bone), cut into chunks
1 onion, diced
2 tbsp tomato purée
1½ teaspoon salt
1 tsp ground turmeric
1 tsp freshly ground black pepper
1 tsp ground cumin
Bunch of fresh coriander, finely chopped (about 100g)
Bunch of fresh parsley, finely chopped (about 100g)
Bunch of fresh dill, finely chopped (about 100g)
½ bunch of fresh mint, finely chopped (about 50g)
1 leek, finely chopped
100g spinach, chopped
2–3 crushed dried limes, deseeded (these can be found in Middle Eastern stores or use the juice of 2 lemons)
NOTE You can include the stalks from the herbs if they are soft.

METHOD
1. Pre-cook the butter beans: pour 1.5 litres water into a saucepan, bring to the boil, cook for 15 minutes, then turn off and cover with a lid.

2. Heat the oil in a saucepan over a medium heat. Add the meat to the pan once the oil is hot and sear it all over.

3. Once the meat has browned, add the onion and saute for 5–10 minutes until golden brown. Add the tomato purée, the salt and the spices and cook for about 3–5 minutes until the aroma is released and everything has combined.

4. Add the herbs, leek and spinach and 500ml water to the saucepan along with the butter beans with the remaining water. Add the dried limes (or lemon juice) and stir, making sure the water covers the beans and meat.

5. Cover with a lid and bring it to the boil, then turn down the heat to medium-high heat. Cook for 50 minutes until the meat is tender and the sauce has reduced.

6. Serve it with your favourite rice and pickles.
