While I am never the one to be searching for words to speak, when it comes to 2025, I must take a deep breath first. In the same year I celebrated the 5th anniversary of Nanoom Dining, I also saw the city that I love suffer in ways I've never seen before. I took some time off to consult new restaurant developments, had a seat at the table working with Sempio and Sulhwasoo, all the while starting therapy and going through a successful IVF. And now I start 2026 the same way I started the year before, full of optimism and gratitude. by @nanoom_dining

Function — Fiction dinner @gobi.losangeles with @nanoom_dining and dessert by @migaam_la is an interactive and intimate 14 seat communal dining experience where guests enjoy 4 course tasting menu and @jinro_us @official.ilpoomjinro drink pairing that conceptually interprets ideas within the group show. 

With a @girlndugfarm ssam table-scape garden that prompts you to pick/create your own bites while writing your own menu as each person experiences the offerings slightly differently. 

Throughout the dinner you’ll experience a wide range of contemporary Corean ceramics and vessels along with traditional craft art pieces from Corea. 

We walk you through the exhibit, introducing you to fun stories surrounding Corean cuisine and ingredients.

On a cold day like today, I think of my mother. I once asked my mother what her favorite winter food was when she was growing up. She replied that it was eating ice cream with her sisters, wrapped in blankets during long winter nights. Even now, when my mother comes over for dinner, I would buy her favorite pint of ice cream, and she finishes in one sitting before she goes home. As for my favorite winter food, I side with my father,  as I prefer a bowl of  bone broth with noodles with good kimchi. by @nanoom_dining

While being interviewed for a documentary, I was asked the following question: "If Corean food can speak, what would it say?" For me, Corean food isn't just about ingredients or cooking techniques. It's about the feeling that I have after consumption. A proper Corean meal should always feel soulful and nourishing. And if Corean food can speak, it will say "share." by @nanoom_dining

Nanoom Dining is a narrative driven dining experience. And like any story worth sharing, it's a love story. It is about my love for cooking traditional Corean food. It is about my love for my culture and the heritage that I am very proud of. But mostly, it's about my wife, Esther's extraordinary love for me. In the time when I was laid off due to the pandemic and I was feeling undesirable, it was Esther who told me to never stop dreaming and do what makes my heart full.

My Nanoom Team consists of chefs who have all worked for me as a sous chef or executive sous chef. But more importantly, they are my friends who I can trust to support me and love me enough to correct me when I am wrong. They are some of the most loyal people I know, and I am grateful for my team.

I've been cooking professionally for 19 years, and the past three years of Nanoom Dining have been the most rewarding time of my career. At Nanoom Dining dinners, I have cried with complete strangers telling personal stories about my father and about my wife. I have had the honors of feeding first-generation Corean parents food from their childhood.  I made friendships that I look forward to nurturing for the rest of my life. What makes Nanoom Dining special isn't necessarily the food and the cocktails I prepare, but it really is the stories I share and the people I connect with. I am a storyteller who cooks, and by trusting me to nourish your body, you become a part of my story.

This is my banchan number 53. I can't truly recall the first time I had 꼴뚜기 조림 (soy braised baby octopus) as it's not a banchan my mother really made before. But the first time I made this banchan, it was like unlocking a forgotten memory. I knew that if my grandmother was still around, she would have approved. When you join me for your Nanoom Dining experience, you and your guests will taste around 25 banchan. by @nanoom_dining

With Nanoom Dining, I cook food to tell personal and cultural stories. For some people that eat my food, I help them create new memories while for others, I help them rekindle old memeories. The very first time I prepared kelp "ear" banchan for my mother, she told me it was her first time eating them in decades and it brought back memories of her childhood growing up in Busan. by @nanoom_dining

Kimchi is super food. Each and every ingredient in kimchi is not only flavorful but each bring their unique health benefits, vitamins, and nutrition. And when you combine the ingredients and ferment them, not only is the lactic acid great for your gut health, but nutritional value of the ingredients become higher than if you were to consume them individually. I love finding these hidden wisdom in Corean food as if our ancestors wanted to remind us that individually we are strong, but together we serve a greater purpose. by @nanoom_dining
