Join us at Sea Chef  for a one of a kind evening on the docks.  Upon arrival you’ll be greeted with a glass of bubbly before boarding one of four different fishing vessels.  Once aboard, enjoy Hors d’Oeuvres inspired by the vessel. You’ll meet the Chef and the Captain and  learn about the local seafood that inspired the dish, each fishing vessel, its gear and methods used on the water, and hear a few sea stories too. 
When the boat horn sounds, you’ll proceed to your next vessel and continue to taste why local North Carolina seafood is so special. 
Once your feet are back on land*, you’ll be seated for a four-course dinner at Sea Chef Dockside Kitchen, curated by Chefs Mac & Jeff Buben, and featuring three guest NC Catch Chef Ambassadors. @seachefdocksidekitchen  @carolinachef @austenschindler @tinygalleychef

Welcome Chef Daphne Bennink as the newest addition to the NC Catch Chef Ambassador Program, our first to represent Ocracoke Island!  Our reach continues to grow across the state - from the coast to the mountains - our Chef Ambassadors sing the praises of real, local, fresh, North Carolina Seafood!

NC Chef Ambassador Daphne Bennink is executive chef and owner of the Back Porch on Ocracoke Island, NC. 

Raised by French parents on Long Island, she learned about the treasures and bounty of the shore and sea. My father would take us out on the island where we would forage for mussels, long neck clams and these tiny snails that we would steam and pick the meat out with pins.  We summered on Ocracoke Island  where we dipped bluefin crabs along the seashore. Back then they were abundant. On a good day we scooped up a trash can full, then steamed them up with lots of old bay and feasted.

Alice Pipitte Spirkel, who lived with her grandparents and did all the cooking, taught young Daphne all the basics of French cooking.  By the time she was 11 years old, she could make a simple cheese souffle’ or a caramel flan. 

At the Back Porch since 1998, her cooking blends traditional French technique with Southern coastal flavors, focused on seafood and local produce. Daphne actively supports local watermen, nonprofits, and sources seafood from island fishermen — including her son Dylan’s oyster, clam, and commercial fish operations, Blackbeard’s Tears.  She enjoys educating her customers about local seafood and the quality it conveys.

Welcome Chef Jason Seddon as a new addition to the NC Catch Chef Ambassador Program.  Our reach continues to grow across the state - from the coast to the mountains - our Chef Ambassadors sing the praises of real, local, fresh, North Carolina Seafood!

Jason is a Wilmington based Chef with a passion for fresh, local ingredients and the connections food creates. Originally from Arden on the Severn in Maryland, Jason grew up surrounded by coastal communities, where he developed an early appreciation for fishing, crabbing, foraging, and everything seafood.

Throughout his culinary career, Jason has worked in restaurants, hotels, and country clubs and enjoyed creating memorable dining experiences while continually expanding his knowledge of food, hospitality, and coastal cuisine. Since living on the North Carolina coast for the past 20 years and now working at the Country Club of Landfall, he values the opportunity to showcase the quality and versatility of local seafood while supporting the fishermen, seafood markets, and communities behind the catch.

As an NC Catch Chef Ambassador, Jason is proud to promote North Carolina seafood and encourage others to support local fisheries and coastal traditions. He believes great food starts with exceptional ingredients and that every meal is an opportunity to connect people, celebrate local resources, and tell a story. If you can’t find Jason in the kitchen, he’s probably out back working in the garden with the honeybees. 

Jason’s six-year-old son, Elliot, has developed a growing interest in cooking and fishing, often found asking questions, helping in the kitchen, and learning alongside his dad. Sharing his passion for food with the next generation has become one of Jason’s greatest joys and reminds him daily why food is about more than what’s on the plate, it’s about the memories made around it.

The 23rd annual @ncblueberryfestival in Burgaw, bursts to life with local flavor, live entertainment and a spotlight of the area’s sweetest crop. Crowds gathered downtown to enjoy food, crafts and family fun, all while showcasing North Carolina blueberries. Mayor Olivia Dawson joined festivalgoers in the heart of Burgaw to celebrate all things blueberry.

Covey Restaurant Executive Chef Austen Schindler will showcase the flavors of the North Carolina coast at the North Carolina Blueberry Festival in Burgaw on Saturday, June 20. Schindler will present live cooking demonstrations at the NC Catch booth in the morning and afternoon, highlighting recipes that pair fresh North Carolina seafood with one of the state's signature crops.

Schindler is a member of the NC Catch Chef Ambassador Program, which recognizes chefs from across the state who champion North Carolina seafood and support local fishing communities.

"Blueberries are one of North Carolina's great gifts," said Schindler. "Most people think of them for pies and preserves, but on the coast they're just as at home beside fresh seafood, bringing the same balance of sweetness and acidity that a squeeze of lemon would."

Held annually just 30 minutes outside Wilmington, the North Carolina Blueberry Festival celebrates the state's agricultural heritage and attracts visitors from across the region. Guests are invited to visit the NC Catch booth at 11 AM and 2 PM to watch Schindler in action and learn more about the importance of choosing local seafood.
