"Sumac" in the native Quechua language means beautiful or delicious, depending on the context.

The incredible food at this tiny little hidden family run restaurant was absolutely both - @sumac_vegano

This 2nd floor home-style restaurant, with only 3 tables - could compete with any Michelin restaurant in the world.

OMG Lima, Peru has some amazing vegan food. I'm only sad I can't get many of the same meals in Chicago.

Daily breakfast at @kaclla_the_healing_dog_hostel - granola cereal bowl with fresh fruit, peanut butter & jelly with fresh baked bread, orange juice with pureed oranges, & coffee.

@sabor_y_vida - Parrillada - grilled steak (best vegan meat I've ever had), with potatoes, corn, &spicy mayo. I immediately wanted to go back for more.

@eljardindejazmin - Pachamanca - Andean potatoes, tofu, mushrooms, fava beans, herbs, and an amazing spicy sauce. Such a unique dish.

@elvegetarianosayel - Menu del Dia - soy meat, quinoa, rice, & veggies. Looks so simple, but so fresh and flavorful.

@watsonvegano - Watson Platter - seitan skewers, chorizo & salami slices, papas fritas, & spicy sauces. For the vegan meat lovers.

Now on to Cusco. Where I'll be eating good too 🇵🇪 by @nickglazebrook

Lima's known for their food - but primarily for seafood & beef. Well, fortunately for me, the vegan options here at @seitan.bistro are incredible too.

Their seitan based vegan meats are all made in-house.

After having dinner; Saltado with beef & mushrooms, with mashed potatoes, gravy, & veggies...

I had to go back for lunch para llevar to the malecon:

Chicago is fortunate for so many reasons.

Including to have a progressive mayor that is actually fighting for the least privileged in the city.

Compared to 40 years of corrupt mayors who extracted wealth from working people - only to dole it out to its wealthy donors & friends.

@chicagosmayor should have far more support than he does. But the wealthiest here control the media, who control the narrative.

He's the best mayor Chicago's had in 45 years, and easily one of the best mayor in the country. taken in Chicago Lake Michigan by @nickglazebrook

Chicago has the best city lakefront in the country, period. 🏖☀️

100% public. A wide variety of landscapes and endless activities for everyone - including for free.

I regret not taking advantage of it growing up.
But now grateful I've been able to paddleboard from 63rd to Loyola over the past couple years.

This trip covers:
- 63rd St Beach
- 57th St Beach / The Point
- Oakwood Beach
- 31st St Beach
- Northerly Island
- 12th St Beach
- Monroe Harbor

Our city could be so much better for everyone - if the city council backed @chicagosmayor's budget to make the richest paid their fair share - so we could properly fund public schools, youth programs, and affordable housing.

But too many Alders (and Chicago media) are bought off by the rich to represent their bank accounts instead of us.

Eating vegan in Chicago is pretty easy & incredibly delicious, especially with talented local chefs at @chicagovegantestkitchen.

100% Plant-based:

@stemartaen: bbq wings, cheese-steak, mac & cheese, nachos, & greens

@libbyscorner_chicago: bacon biscuit breakfast sandwich, sweet chili steak, jerk chicken, cheesy potatoes, black-eyed peas & rice, & more greens

@vivalahorchataoficial - oat milk horchata to wash it all down

Making a little something from old skateboards at @ava_grey 🌴. The glue oozes out with the different colors of ink in the decks, making it look like a dessert. Or maybe I'm just hungry 🤷‍♂️

Back when we were creating an origami crane with @pscottart. This is the tail, made from broken skateboards. We needed all of our smaller clamps to make this perfect. .
