We wanted to see what happens when the pouring is deliberately bad.

For this experiment, we brewed as if we were just starting out. 

Uneven pours, inconsistent agitation, and very little control.

 After every pour, we used the Snap⁰²⁹ before continuing.

An uneven pour can leave different parts of the coffee bed extracting at different rates.

Snapping gives the slurry a repeatable reset, redistributing the coffee and liquid before the next pour.

It will not turn bad technique into good technique. 

But it can make the consequences of getting wrong, taste right! by @oddlyspecific.coffee

So we made a new tutorial.

For this one, we thought it was probably time you met some of the people behind Oddly Specific.

First up is Stefan Manole, our head of sales. 

Two-time Romanian Coffee in Good Spirits champion, 9th at the World Coffee in Good Spirits Championship, and someone who has spent a fair amount of time thinking about coffee, competition, and how to get the most out of both.

For his introduction, Stefan is brewing @daterracoffee Chamego Masterpieces from @pagacoffeebkk using his own recipe for the Snap⁰²⁹.

Mostly though, this one is about getting to know Stefan, how he approaches coffee, and the person we get to work with every day. by @oddlyspecific.coffee

Snap Brewer from Oddly Specific

One of the most unique brewers out there, Oddly Specific added a Snap feature to the brew itself. This allows for level coffee grounds consistently each and every brew. This feature also helps in disturbing the brewing column mid-brew releasing trapped CO2 within the bed.

When we first started competing, one of the less glamorous parts was how quickly everything added up.

So we wanted to make that part a little easier for the people doing it now.

We’re launching our Competition Set, available at a discount for anyone currently competing. And if you add any of our Sibarist x Snap filters to the same cart, those get discounted too.

It is a small thing, but it comes from remembering what those early competitions were like for us, when every extra bit of kit, coffee and practice had to be justified.

Competitions are expensive enough already.

Jacob Thue has been around some of the nerdier corners of coffee for quite a while.

Before @baristahustle , he built the RO system at @prufrockcoffee , spent a lot of time exploring how water composition affects brewing, and was part of the team around Jem Challender’s famous Brewers Cup routine.

These days he is Head of Marketing & Design at Barista Hustle, while still writing about brewing and coffee science.

So for this brew guide, Jacob is taking over the Oddly Specific HQ. 

He walks us through his own recipe for the Snap⁰²⁹, how he approaches the brewer, the water and the choices behind it.

Apparently the Snap⁰²⁹ has been collecting some myths around it.

For this one, we picked four of the myths that keep finding their way back to us and went through them properly.

Some are reasonable questions. Some require a little more imagination.

And because we couldn’t leave it entirely at myth busting, there’s a small tip at the end that might actually be useful.

Coffee competitions have a habit of being credited with pushing the industry forward.

Which raises a more interesting question. How much of that progress comes from the competition itself, and how much happens around it?

For this one, we’re brewing the natural Gesha from Pocho Gallardo’s Finca Nuguo that @simon_gautherin used during his 2026 competition season, including as part of the blend that took him to second place at the World Brewers Cup in Brussels.

We brew it using Simon’s recipe for the Snap⁰²⁹,  with our own @apaxlab water recipe.

Back in January, @christopherferan published a rather extensive piece about a rather mysterious coffee.

Known in Peru as Inca Geisha, genetic testing has placed it very close to Scott Labs Selection 09, despite there being no clear historical explanation for how SL9 could have ended up there in the first place.

Seven months later, that story has a coffee attached to it.

Aviary’s latest release comes from Alina Milagros, a small producer growing Inca Geisha at 2,400 metres in Cusco. 

Bright, floral and intensely sweet, with lemongrass, jasmine, orange, green melon, tamarind and raspberry.

So this felt like a particularly good coffee for another brew guide.

This time, we’re brewing Alina’s coffee using Christopher’s own recipe for the Snap⁰²⁹.

And, rather conveniently, @aviary.coffee called their release 029, so for us it felt like a match made in heaven. by @oddlyspecific.coffee
