On the doorstep of the 20th (!!!) michelinman dinner I’ve been reflecting on this conversation I had with Chef Pietro [@officialcatalano] at his restaurant [@caaa_lucerne] in Switzerland.

I launched this dinner series last January. Since then I’ve taken it across the US, to Canada, to Switzerland, to Poland, to Portugal, and to Sweden. In November I’ll be back in Europe to break ground in two new countries and return to one old.

At the same time, I’ve experienced more rejection than you can imagine. I’ve sent over 3000 pitches (including re-pitches) to restaurants and chefs. Most didn’t even receive a response. I’ve done 19 dinners and have 11 more scheduled through January. That’s a 1% success rate.

“If you build it, they will come” is burned into my brain. Every successful dinner reminds me that I’m building it. Every no, every unread/unanswered pitch, every chef that says yes but then goes ghost or backs out reminds me that I haven’t finished building it yet. by @officialcatalano

When i Personally start our Dineology Concept i ask myself…. What if a hotel was not a place to stay…

…but a place you enter for a feeling you cannot find anywhere else?

Too many luxury hotels today are flawless — and completely forgettable.

Perfect rooms. Perfect service.
But no emotional imprint.

With Dineology, we are challenging exactly that.

The image behind this post — a construction plan by External Reference — is not about architecture.
It is about rethinking how experiences are designed from the ground up.

Because the future of ultra-luxury hospitality is not built on rooms.

It is built on ecosystems.

At Dineology, we don’t create restaurants inside hotels.
We create destination experiences that make people come — even if they don’t stay.

— Arrival is not check-in. It is the beginning of a story.
— Dining is not a menu. It is a curated, multi-sensory journey.
— Staff are not employees. They are storytellers and experience guides.
