Recipe @foodbymaria This is the third time I have made this dish. The first time I think I added more cheese than it said and it turned out just like that in the picture but cooking it at 180 degrees wasn’t working so I ended up cooking it this time at 200 degrees for 35 minutes. It looks like an iron pan was used which is supposed to hold the heat more and I used stainless steel but I know ovens can be different too. The second time I made this it had less cheese in it so this time I added a bit more than it said as I preferred it cheesier. I used cheddar cheese by the milk co. The recipe calls for white cheddar which as it turns out is just cheese without colouring added. Apparently Australia doesn’t do that. Learn something new everyday! The reason I picked this recipe at first is because not only did it sound tasty but twice I ordered Jasmine rice and was given Basmati rice but didn’t have any recipes that required it but now I do and I love it. It was 2 kilos of basmati rice and I am down to a kilo but I have more recipes that require this rice and I plan to make it a staple from now on. The first couple of times I made this I couldn’t find free range chicken cutlets but managed to find them in harris farm. Everything in this recipe was organic, the cheese, the rice, the broccoli, spices, onion, garlic, seasonings, parsley etc. It isn’t always easy to eat like this but it is getting easier to figure out where to shop for everything. This recipe is a repeat. by @oneofthewanderers

Recipe @whatsmomcookin_ Once all the preparation for this recipe was made and there was a lot. I couldn’t find Italian sausage mince at my local grocery store so I bought Italian sausages and removed the meat from the casings which were an extra step. According to the helpful internet you can actually use pork mince and a bunch of spices. I will google what quantity and what spices next time but the sausages worked out well and either way it was it’s an extra step until they sell this item at some point. The recipe tastes amazing! I managed to find marinara sauce but they didn’t have 680g jars so I bought two jars at 480g and I plan to use the leftover marinara sauce for a shakshuka breakfast recipe I found. I try to use free range for all chicken, grass fed beef etc but not always possible so I make do with what I can get to accomplish a recipe. I used bone broth concentrate by @nutranaturals naturals to make the chicken stock. I do this whenever a recipe requires stock in order to get anti-inflammatory foods into my diet. I can’t always get organic but I try. I use organic for all the cheeses, vegetables and spices and I used @ranapasta_aus_nz for the cheese tortellini. I am picky about tortellini but this one was tasty šŸ˜‹. The dish overall I absolutely loved and I will absolutely be making this again and adding it to my favourites. #tortellini #italian #italiansausage #soup #spicyitaliansausage by @oneofthewanderers

Recipe @donnahaymagazine @donna.hay I halved this recipe but I should have only done a quarter of the recipe since it makes enough for four people. It was delicious and very filling. I plan to make it again. I plan to make some more Mascarpone recipes so I can use it up. It’s one of my favourite cheeses. It was easy to make. I highly recommend. #mascarpone #scrambledeggs #donnahay #smokedtrout by @oneofthewanderers

I’ve made this one before but I like this photo the best. This one was shot in natural light and the other two were shot in natural light but the sun was going down so it was darker and therefore made the photo grainier. This dish is one I will probably make on repeat. It’s supposed to be spaghetti but I prefer the smaller pasta of the gnocchi sardi. Also in order to get some protein in I added prawns and added some snow peas to get more vegetables in my diet. I absolutely adore this recipe!!! I used Free Range Chicken Tenderloins, not as much as the recipe suggested. Normally the ingredients are easy to get but there seems to be a shortage of Organic Coriander & Baby Spinach. I think I’m going to make more tacos in the future. Right now I’m interested in Tacos, Smash Tacos & Ramen dishes. I’ll post them soon. I’m managing to delete more photos I don’t need so I’m able to use my phone šŸ“± again. In this recipe I made the pickled onion in advance and coated the chicken in the seasoning, also ahead of time and then rested in between each step. I am trying to pace myself since I don’t want to keep crashing because I never seem to know my limits and let’s face it, having a chronic illness means you can do all the ā€œrightā€ things and still burnout. But this recipe was so easy and tasty! I tried both the flour tortillas and the corn ones provided in the kit. Personally I recommend the corn for the taste and crunch. #tacos #oldelpaso #woolworths #airfryrecipes #mangosalsa by @oneofthewanderers

Recipe @forgetthetakeout I liked this recipe but didn’t love it. It was spicy which is ok if you like spice but I found that that’s all it was. It didn’t have much flavour even though it was quite simple and easy to make which I like. Any recipes where I don’t have to stand over a stove for long periods. This recipe I used organic vegetables, yogurt, raw organic honey šŸÆ and free range chicken mince. I used corn tacos that don’t have any nasties. I try to keep it healthy when I’m not having too many symptoms - I keep forgetting to post my photos but also I have not been able to use my phone for a while cause I camera roll keeps getting full. It wouldn’t let me turn it off at one point, I had to go through forcing it to turn off. I got rid of a bunch of photos but it barely made a dent. Only managed over 2GB of storage back. Not enough but it’s going to take me a while to go through all 50,000 plus photos in my camera roll and remove whatever I don’t need. It’s a lot of information about Endometriosis that I have to write down also. I never stop researching. I’m always finding out more and more about this wretched disease. by @oneofthewanderers

Texas Style Chilli, recipe @britacooks
This recipe gave my wrist some trouble. There’s lots of stirring involved so be sure to take rests if you try it. And give yourself longer than you think. It tired me out doing this recipe. Rest is important. I’m still learning to pace myself no matter what I am doing. In pain management I learned I am the overachiever and therefore I do what they refer to as the ā€œboom and bustā€. Meaning when I have energy I use it to go hard and fast to get lots of things done. I try to do too much. So I am learning to slow down and pace myself. Rest in between activities etc.
There’s a lot of meat that needs cooking so rest in between each item. There is bacon, chorizo and beef mince. Less chopping involved which was nice but the stirring wrecked me. I’m also learning to be easier on myself. Knowing your limits is not always an easy thing to gauge so try not to beat yourself up. I had to rest after cooking all the meat. I always have a chair nearby so I can sit but that didn’t help my wrist so I took a break before I started again and my wrist was grateful for that. I chop sitting down at the dining table to also make that easier on my legs and back. Both back and legs can be in a lot of pain from standing for long periods. But after all of that you can rest for two hours while it simmers and then it’s ready. Easy to put together with sour cream etc. by @oneofthewanderers

This one is called Easy Creamy Ricotta Pasta. I loved this one too. I love any creamy pasta but I also love that this recipe was so easy. Not too many ingredients. Not too time consuming, hard or standing on my feet for too long. I still sat down but that’s being chronically ill. I always keep a chair nearby when I cook.
