Dried peppers for Paprika and other different spices🌶️
The bigger ones are balkan spices named “Kurtovska Kapija” or “Ajvarka”. They are super sweet and have very thick texture when you eat them fresh!

Oliver and Yasmina are growers of those amazing peppers and we had the opportunity to taste their homemade Ajvar and Pinjur🌶️🍆
Two different spreads that made out of roasted peppers (sometimes eggplant and other carrots) apple vinegar (also homemade of course), salt and sunflower oil.

It was also grapes harvest season🍇

So while driving around the country, we’ve crossed those barrels that were full of grapes!!!

And we taste some of this superrrr sweet juice

Cow’s liver, pork ribs with a bit of a vinegar and raw onion, “Shopska” salad, Pinjur and grilled bread🤤

“Kosmos” is an old institution at the “Bit Bazar” in Skopje. Their menu contains not more than 10 items. Macedonian food is super simple and it gives the stage to their high quality ingredients!

Happyyyy🇲🇰

Some traditional sweets . I would really recommend to go to this amazing sweets shop named “Rigra”. Their specialty is this cookie on the left side- Macaroon cookie style made with ground walnuts and meringue as a filling🍪

“Tres leches” is also really popular at the sweet dessert scene around Macedonia. It’s definitely not a traditional dessert in the balkan but you can find it everywhere!
This cake could easily be super sweet, but in “Rigra” it’s perfectly balance🥛

Macedonia is full of different languages, origins and traditions because of history and politics. Thank to that (or not) the food around the country is so diverse and affected from Turkish, Albanians and Balkans.

Gibanica- pastry from the Balkan made with layers and layers of buttered fillo dough filled with different kinds of cheeses, sometimes also eggs and yogurt. It’s super fluffy inside and crunchy outside 🥐

Burek and Ayran are the perfect comboooo

It was also apple season and I felt that this one was Snow white’s one🍎🍏

For the past few months, I’ve been working on @fivetalesfarm. place driven by curiosity, experimentation, and a desire to grow not only the familiar, but also unique and unexpected varieties.

During this time, I’ve made different gelatos, each one inspired by the season and by what the land had to offer. It became a process of listening to the ingredients, to their flavors, and to what they wanted to become.

This post is a reflection of that journey🍨
Sweet corn/ Peaches&cream/ Purple basil/ Rhubarb &lime/ Sorrel/ Habanada peppers🌶️

A big thank you to all the growers and plant breeders!! @fivetalesfarm @intotherootsfarm @row7seeds @chefdanbarber .
It’s thanks to you that such beautiful ingredients exist, making it possible to create gelato that is so much more than just sweet🍦🍦🍦#gelato #gelatofarm by @or__elitzour

If you’ve ever wondered what paradise looks like- Indonesia 🇮🇩
This endless island country is rich in natural resource from coffee and cacao to vanilla, and that’s just the beginning.
I’m truly grateful for the opportunity to travel the world and discover so many different cultures, foods, languages, and, most importantly- smiles 😁 taken in Indonesia by @or__elitzour

After three amazing days in Yunlin country Taiwan🇹🇼.
Thank you, Ozzi, for sharing with us the process of soy sauce production.

Tasting different soy sauces- each crafted through unique methods and from distinct soybeans across Asia-reveals just how vast and profound this world truly is.
At the family-run factory, soy sauce is made using both dry Australian salt and brine fermentation. Some are produced from soybeans grown in southern China, while others come from locally sourced Taiwanese beans. The difference between them is like night and day.
We were fortunate to experience a range of flavors, from sauces aged for six months to those matured for three years. Maple, wood, whiskey, vanilla, and so many more notes emerged as I tasted them.

‏Over the past month, I have been volunteering at Sahainan Organic Permaculture Farm, and I find myself at a loss for words to describe this experience. Permaculture is more than just a practice—it’s a way of life. Nature offers us endless resources and gifts, we only need to listen and appreciate them. Never forget where we all came from. taken in สหายน่าน Sahai nan by @or__elitzour

Baking challahs at Sahainan Farm.
Probably one of the most meaningful moments of my journey so far.
No proper mixer and, of course, no oven.
But I still made it.
Tastes like home. ❤️ taken in สหายน่าน Sahai nan by @or__elitzour

Khao Lam is a traditional Thai dessert made from jungle bamboo, filled with sticky rice and coconut milk. Sometimes, black sesame seeds or black beans are added for extra flavor and texture.

This factory specializes in producing this delightful sweet treat, working tirelessly on weekends to produce thousands of bamboo sticks. The process begins by sealing one end of the bamboo tube, filling it with the chosen mixture, and then sealing the other end. Each stick is marked with a different color to indicate the type of filling inside.

Once prepared, the bamboo sticks are roasted to perfection, and after cooling, the outer layer is peeled away to reveal the delicious dessert hidden within. taken in Doi Saket by @or__elitzour
