High Protein Rice Paper Buffalo Chicken Hot Pocket ✨

Crispy on the outside, creamy and spicy on the inside. These are ridiculously easy, and high-protein.

For everyone asking about the app, just search “Osta” on the App Store or Google Play 🙌 I’ve been using it to save & organize all my favourite recipes!

Ingredients

* 3 lbs cooked chicken breast, shredded
* 12 oz @good_culture cottage cheese
* ⅓ cup @franksredhot Buffalo sauce
* ¼ cup green onion, finely chopped
* handful low fat shredded mozzarella
* Salt, to taste
* Black pepper, to taste
* Onion powder, to taste
* Rice paper sheets, 2 per hot pocket
* Eggs, beaten, for dipping

Instructions

1. Make the filling. In a large bowl, combine the shredded chicken, blended cottage cheese, Frank’s RedHot, cheese, green onion, salt, pepper, and onion powder. Mix until everything is creamy and evenly coated.
2. Prep the rice paper. Beat the eggs in a shallow dish. Dip 2 rice paper sheets together into the egg wash just until they begin to soften. Don’t let them sit too long or they’ll become difficult to work with.
3. Stuff & fold. Place the softened rice paper on a flat surface. Add a generous scoop of buffalo chicken filling to the center. Fold the sides inward, then fold the top and bottom over the filling to create a sealed rectangular “Hot Pocket.”
4. Bake. Place seam-side up on a parchment-lined baking sheet. Bake at 450°F for 10 minutes.
5. Get them crispy. Switch the oven to low broil and broil for about 5 minutes, or until deeply golden and crispy. Keep an eye on them during this step, they can go from golden to scorched fast.

Serve hot with extra buffalo sauce, ranch, or blue cheese dressing for dipping.

Seared Scallops with Lemon Dill Sauce 🍋🌿 #ostapartner

This sauce is bright, buttery, tangy, and honestly tastes like something you’d get at a restaurant, but it’s surprisingly simple to make at home. It’s also incredible with chicken, asparagus or broccolini.

You can now save this recipe to Osta! The app link is in my bio, or search “Osta Recipes” in the App Store or Google Play Store.

Full recipe below 👇🏻

🍋Lemon Dill Sauce

🌿Ingredients:
• 1 small shallot, diced
• 2 cloves garlic, sliced
• 1 tbsp butter (to sauté aromatics)
• 1/2 stick butter (cut into slices, reserve to finish sauce)
• 1/3 cup white wine
• 1/3 cup white wine vinegar
• Heavy cream (about 2 tbsp)
• lemon juice, to taste
• 1 tbsp fresh dill, divided
• Seasoning: 1 tsp garlic & onion powder, 1/2 tsp dried mustard, salt and white pepper (I suggest a small pinch of white pepper) to taste

👉🏻Method:
• Sauté shallot in butter until translucent, couple minutes
• Add garlic and let bloom (until fragrant, about 45-60 seconds)
• Add equal parts vinegar and white wine
• Reduce by half, add seasonings and 1/2 tbsp fresh dill, then reduce another couple minutes
• Strain for a smooth sauce; return to heat on low to medium low
• Add a splash of cream & whisk to incorporate. You can add more depending on the consistency you prefer
• Add 1/2 stick cold butter in cubes, a few at a time, whisk and let thicken
• Add remaining 1/2 tbsp fresh dill, a squeeze of lemon and serve. (If you really love dill flavor; you can add some extra dried dill here too.) taken in Charlotte, North Carolina by @ostarecipes

Cheesecake Filling:
• 3 oz cream cheese, room temp
• 1½ tbsp sugar

Directions

Beat cream cheese, sugar & vanilla until smooth. Scoop ½ tbsp portions onto parchment and freeze for 30–60 min.

Brown the butter in a saucepan, then cool until still liquid but slightly thick.

Whisk brown butter with both sugars. Add egg & vanilla.

Fold in flour, baking soda, cinnamon & salt until just combined. Chill dough for about 20 min if too soft.

Scoop dough into 6 balls. Flatten each, add a frozen cheesecake filling portion to the center, then wrap the dough completely around it.

Mix sugar & cinnamon. Roll each dough ball in the mixture and place on a lined baking sheet.

Bake at 350°F for 10 min, or until the bottoms are golden.

Mini meatball pasta 🍝

This dish has received a lot of love! You can save this recipe directly to Osta! The app makes organization a breeze.

Osta app link in my bio 🍇 🍅 🍋

Ingredients:

1/2 lb pork sausage
3/4 teaspoon Italian seasoning
1/8 teaspoon salt and pepper
1/4 teaspoon each garlic and onion powder
1 Tablespoon olive oil or oil of choice
1/3 cup water, preferably pasta water.
7 oz jar tomato basil sauce
1/8-1/4 teaspoon red pepper flakes depending on preference
1/3 cup heavy cream
2.5 cups cooked Ditalini pasta
1/3 cup grated Parmesan

Directions:

1) To a bowl, add pork sausage, Italian seasoning, salt, pepper, garlic and onion powder then mix well.
2) Roll into 1/2 inch balls or smaller
3) boil water and cook pasta according to box directions. Keep 1/3 cup pasta water! Can toss pasta in olive oil or butter so the pasta does not stick
4) Heat pan on medium high heat and add olive oil, allow oil to warm for 15 seconds
5) Add rolled pork sausage balls to pan and immediately toss/shake pan. Continue this method for roughly 5 minutes or until golden brown. A utensil will break the meatballs, do not allow them to sot for longer than 1 minute.
6) Once golden brown, add reserved pasta water to deglaze pan then, add tomato basil sauce and red pepper flakes. Simmer on medium low- medium heat for 6-8 minutes continuously stirring
7) Stir in heavy cream and allow sauce to reduce if necessary then, stir in Parmesan

Serve with extra Parmesan and Cesar salad or garlic bread and enjoy! 🍝🩵
