A quick lesson in #merroir and the power of #oysters —

The shape of the oyster shell is directly influenced by its surroundings- whether it’s fast moving waters- overcrowded densities- or sticking to the side of a bag- like the video example.

These oysters attached to the grow bags as youngsters and over time, constructed their shells to neatly conform to the square openings in the bag. This behavior doesn’t affect the taste of the oyster in any way- but the farmer can use this knowledge to create some really cool designs and shapes with their products - typically using shell chipping methods to create tear drop shapes and deep cups. A great example of one attribute of merroir and how the farmer can influence the product
