have you ever wondered what or where foie gras actually comes from? my chef (Leif Evans) iceculinary gave us this great explanation to tell us about what foie gras really is. just a reminder that he is not making any statements about foie gras being ethical or not, just stating the facts about how it has been harvested and methods that are used today as well (he certainly knows many farms do still force feed their animals). it is fascinating to learn about such high-end expensive items since there is always a level of skepticism around them because of their price tags. hope you all enjoyed, sorry about the lack of culinary school videos this week, got lots going on as it’s Per Se’s 20th anniversary which means i have lots of work to do hahaha. as always if you have any questions feel free to comment below or message me directly :D as told by @stevenmotocooks
