🌙 Nights at @we.are.darkroom are never the same, and that’s exactly what makes them so special. Their handroll pop up featured a lineup that was as creative as it was delicious, and I got to enjoy what @schererzach and @woozface had created.

From the first bite of caviar potato salad to the last spoonful of mango sticky rice semifreddo with puffed wild rice and Thai tea syrup (shoutout to @via_gianna for that sweet ending), the menu was a perfect balance of playful concepts and bold flavors. The Singaporean chili crab handroll was a favorite. It was rich, saucy, and the kind of bite you just do not forget. The night was full of standouts including Hokkaido scallops with lime leaf and peanut, chili pepper shrimp with yuzu mayo, sesame smoked wagyu tartare with pickles and habanada, and even a focaccia brown butter lobster roll handroll that reimagined two classics in one.

It did not stop there. Bluefin tuna with plum sauce and kataifi added a crispy surprise, while the Iberico secreto banh mi with pickled carrot and chicken liver layered incredible depth into a single roll. Every dish felt like a new story, which is exactly why @we.are.darkroom continues to be one of the most exciting dining experiences around.
