Re:MEX Vol. 3 — that’s a wrap, and what a wrap.

For one night, the DARKROOM + Three Eyed Tiger crew joined us at Daisy and it got loud in the best way. Chef Alan Sanz trading plates with Chef Zach Scherer and Chef Drew Adams, Gianna Marcario’s limited-run cocktails doing the rounds, and a soundtrack the whole crew built track by track.

One menu, cooked once, gone forever. If you were in the room, you know. If you weren’t — that’s the whole point of a no-repeats series. Lo siento.

To everyone who packed the house: gracias. To the crew who drove up from Santa Ana to cause this much trouble: come back anytime.

Vol. 4 is already whispering. Stay close.

When you meet someone you are never sure of how important to your life they will be. A friend recommended GIanna to us through Instagram. She moved back to OC from Portland and was looking for something special to be a part of. Impressed by her demeanor, we brought her on and since then she has been pivotal in helping DARKROOM grow into what it is today.

Every accomplishment thus far — every awesome cocktail, every warm service greet — has had Gianna’s incredible and intentional guidance behind it.

It is with great pride that I announce that Gianna is going to be a key part (and operating partner) on our next and newest project: @three.eyed.tiger.oc. She will be the cornerstone in what we are building there, a world-class cocktail and hospitality program.

That said, all great things must end, so on June 23rd join us as we celebrate Gianna all night long. We will have specialty cocktails (she is releasing No 99 and No. 100) and we will have a jello shot “toast” at 8pm!

Before we open our doors, we’re throwing a party with our neighbors!

On Sunday, October 4th, our Three Eyed Tiger Beverage Director Gianna Marcario joins Sabrina Sarner and the P10neer team for a one-night only patio pop-up. Together we’re building an explorative menu built to celebrate Three Eyed Tiger joining the Costa Mesa cocktail community.

It’s our first chance to pour for you in Costa Mesa, the city where we are opening our doors, and we can’t think of a better way to do it than on the P10neer patio, with good company, alongside a team we admire. Bar snacks will be available from Chef Zach Scherer.

Re:MEX Vol. 3 — cocina entre compas. One night. Two kitchens. No repeats.

Chef @alansanz_c (@daisy.losangeles & @mirate.losangeles) links up with the @we.are.darkroom & @three.eyed.tiger.oc crew — Chef Zach Scherer @schererzach , Chef Drew Adams @woozface , Gianna Marcario @via_gianna, and Lindsay Langton — for the third edition of our collab series. Two histories, two kitchens, one menu that will never exist again.

Think of it as a remix. Technique traded, memory reframed, something familiar made unfamiliar again. Alan’s Mexico-inspired plates meet DARKROOM’s farmers’ market cooking — plus three cocktails created for the night by Three Eyed Tiger Beverage Director Gianna Marcario: a clarified strawberry-and-orange-blossom collins, a margarita with gooseberry and hibiscus, and a stirred mezcal drink with smoked Weiser Farms melon and paprika oil. Limited quantities — when they’re gone, they’re gone. Un tercer sabor, born in real time.

We are starting a summer tradition, the weiner battles.

We have invited some great friends over to DARKROOM to create a unique and delicious hot dog, as well as awesome micheladas, and you can vote for the creations you like the most.
