18 days agoBlackberry-Lime Bars 🫐🍋🟩 For the crust * 1½ cups graham cracker crumbs * ¼ cup granulated sugar * 6 Tbsp unsalted butter, melted * Pinch of salt For the filling * 4 oz cream cheese, softened * 4 large egg yolks * 1 can (14 oz) sweetened condensed milk * ½ cup fresh lime juice * 1 Tbsp finely grated lime zest * ½ tsp vanilla * Pinch of salt * About ¾ cup fresh blackberries, plus more for serving Heat oven to 350°F. Line an 8-inch square pan with parchment. Mix the graham crumbs, sugar, melted butter and salt. Press firmly into the pan and bake for 8–10 minutes. Let cool slightly. Beat the cream cheese until smooth. Beat in the egg yolks, then add the condensed milk, lime juice, zest, vanilla and salt. Mix until smooth. Pour over the warm crust. Scatter the blackberries over the filling, gently pressing some partially beneath the surface. Bake for 15–20 minutes, until the edges are set and the center still has a slight jiggle. Cool completely, then refrigerate for at least 2–3 hours before slicing. Top each square with a fresh blackberry before serving. For the Tasty Pairings version: Serve chilled alongside your Midnight Blackberry Margarita Mocktail. The tart lime + creamy filling + blackberry works especially well against the fizzy, herbal drink. 🌙🖤
