Scared of anchovies? Don't be and keep reading!

Two ingredients only, Orange slices and rolled anchovies. If you want, you can add a little bit of salt, some extra virgin olive oil and/or some chopped parsley or chives.

A great appetizer from the Italian region of Abruzzo with a combo that works amazingly: the two ingredients balance each other perfectly.

I made and posted this on August 2,1010 and I also made a pasta version that I will find and share in my stories. It was far time to make it again, and what a better occasion than today, for the orange exploration of #theingredientcollective, the collaboration that I host together with the lovely @s.u.e.j.

Happy November to everyone! 🖖🤠

Experimenting with an ancient food.

Tempeh with broccolini, onion and herbs/spices of your liking.

I sautéed the cubed tempeh, the sliced onion and the broccolini in sesame oil, adding a little bit of salt, turmeric, chilli, rosemary, parsley and a splash of squeezed lemon juice.

Divided little ones on this one. Two against two 🖖🏡🤗

Love to all!

Simple. Tasty. Perfect. Another kids' made pasta from scratch. Egg tagliatelle with butter and parmigiano.

One large egg mixed for every 100g of 00 soft wheat flour and some work to make the dough pliable. Boiled in abundant salted water and dressed with simplicity and love.

Happy children. Laughters in the kitchen.

Love to all 🖖🧡

When the kids challenge you with a song 🍗🍌

Asked what to make for dinner, they started singing the chicken banana song.

Thus, here it is. Chicken thighs marinated in Italian herbs, extra virgin olive oil and a splash of white wine braised in a saucepan with... bananas!

Laughter around the table. Only one said "this doesn't feel right" 🤠 the others loved it!

The grown up: it's more than ok. Could be done again.

Feel the love 🖖❤️

Homemade egg spaghetti made from scratch by the kids with tomato and parmigiano. Swipe to see their school lunch box, they were so proud 🤠

Two days ago you have seen pictures of them making a lot of pasta. This was an easy recipe that called for one large egg every 100g of soft wheat 00 flour and a lot of love and patience tipo work the dough.

We cut them with a imperia pasta machine and boiled them in abundant salted water.

Not only they were yummy, but the kids loved them as part of their lunch boxes the following day. They were very happy to... brag about having made these themselves 👏👏👏

Love to all 🖖❤️

Hazelnut and coffee, the ultimate combo! 🔥

Here a bake inspired by the first episode's coffee and walnut technical challenge. Since I had hazelnuts at home, I went hunting for a nostalgic recipe my mum used to make. I found the perfect match in one of my Triestino patisserie cookbook ❤️

At home I had hazelnuts and I remembered a recipe that my mum used to make. I have a cookbook of Triestino patisserie and I found it.

I whisked 8 egg whites until stiff and firm. I folded in 8 egg yolks, 250g powdered/icing sugar, 200g ground hazelnut, and 80g breadcrumb. I baked it in a 10 inc lined pan at 395F (200C) for 35-38 minutes. I let it cool completely and chilled it in the fridge for a cople of hours. Then I topped it with 250ml whipped heavy cream mixed with 1 tsp cornstarch and just over 1 tsp of soluble Illy coffee. I shall buy more cream next time for bigger decorations and grab some whole hazelnuts for the top. But really, it was perfect as is!

A beautifully balanced and no overly sweet cake. A massive hit with the whole family, it disappeared in less than 24 hours!

The funniest part? Dante begged me not to bake another cake for the weekend, joking that I am spoiling them with three cakes in a week! Then, being a big cheeky, he pulled a Cake in a Mug book from my shelves (yes, I have over a thousand cookbooks!) and laughed, saying "We can make our own this weekend!"

Feeling so much love today. Friendly hugs to all 🖖🫂

Let's start October with a fun pasta making workshop with the little ones and one of their friends.

Two kind of home made pasta dough

Orecchiette and cavatelli, made with 100% durum wheat semolina and a little water.

Tagliatelle and spaghetti made with soft 00 wheat flour and egg, no water added.

It was a lot of fun for all. We cooked the spaghetti and the tagliatelle - posts coming up soon - and froze the orecchiette/cavatelli for another day.

Do you like making your own pasta? Have you ever tried? Would you? And do you have a favorite go to recipe for a special pasta dough?

Love to all 🖖🤠

Chicken schnitzel, but make it rustic rye! If you want a crunchy, juicy, and tender chicken schnitzel with a twist, you have to try this. Swipe to cut into it!

I flattened boneless skinless chicken thighs; dredged them in flour first, then in whisked eggs, and coated them in fresh rye bread with caraway seeds crumbs. No added salt needed - the bread provides all the incredible flavor you need! 🔥 Bake at 375F for about 15 minutes (until internal temperature is over 165F). Serve with lemon wedges or your favorite sauce.

The kid's said "This is upper level!" and the food vanished instantly! 🤣

I could not let September end without posting the third recipe for #onebookthreerecipes, hosted by the lovely @jcs_cooks and @sfornelli.amo. This month's new recipes are joining our regular family routine. Bring on October! Love to all 🖖🍗🤠

Ever watched the Great British Bake Off and thought, " I can make this"?

The first challenge of this year's GBBO was a stout cake with a filling or a topping. I watched the show while drinking a can of Red Duchesse, a Cherry Sour Flander Red Ale, with a dark red color and an intense tart flavor of cherries.

So, I told myself, why not use that instead of a stout in a chocolate cake?

I melted salted butter in the red ale, added cane sugar and unsweetened cocoa powder. I mixed this with eggs, vanilla, flour and baking powder. Then I made a coulis with mixed berries, which I strained to get rid of the seeds and topped the cake with it.

The butter needs improvement, it is slightly dense - I knew the butter was going to be on the liquid side, but I did not trust the process and added a bit too much flour. Yet, moist, deeply chocolatey and tangy, greatly balanced by the sweet berry coulis.

A total joy to eat and a huge hit with both kids and adults!

Love to all 🖖❤️

Panettone or brioche leftovers? Try this decadently moist pudding!

Cut the panettone (or the brioche) in cubes and fill a piece dish. Optionally you can pour a little orange liquor. For each pie dish, mix 3 large eggs with 3 tbsp sugar and 1 cup of milk. Pour it on the cubes and bake at 350 for 40-45 minutes. Let it cool before cutting into it.

You can also add chocolate chips, grated apple, dry fruit or nuts, if you want.

Love to all 🖖🏡🤗

Kids' work with store bought wonton skins: spicy salame with micro arugula filling and Nutella filling.
They also tried cheese and spring onions, jam, honey and nuts.

They celebrated the Chinese mid Autumn Moon Festival in school and asked for dumplings at home. These are far from being traditional, but it kept them entertained for a couple of hours and filled their stomach well 🧡

On a different note, new everyday plates. A Costco end of line buy (i.e. cheap). We like them!

Life keeps me extra busy. Sending love 🖖❤️
