I recall hearing this story, but didn’t realize a book had been written about her. Eager to give it a read - there were several badass women in animation during that era who have subsequently been erased/ignored.

Palak Patra Bites

These bite-sized patras are a quick and delicious twist on the traditional recipe.
They’re perfect for breakfast, tea-time, or packing into a lunchbox.

Ingredients
* Besan – 1 cup
* Red chilli powder – 1 tsp
* Turmeric powder – ½ tsp
* Coriander powder – 1 tsp
* Jeera powder – 1 tsp
* Garam masala – ½ tsp
* Asafoetida – ½ tsp
* Jeera – 1 tsp
* Sesame seeds – 4 tbsp
* Ginger-green chilli paste – 1 tbsp
* Jaggery powder – 1 tbsp
* Tamarind pulp – 2 tbsp
* Oil – 1½ tbsp
* Water – ¼–½ cup
* Salt – to taste
* Baking soda – ¼ tsp
* Spinach – 2 cups, finely chopped

For the Tempering
* Oil – 1 tbsp
* Mustard seeds – 1 tsp
* Sesame seeds – 1 tsp
* Curry leaves – 8–10
* Fresh grated coconut – for garnish

Method
1. In a bowl, combine all the ingredients except the baking soda and mix into a thick, smooth batter.
2. Just before steaming, add the baking soda and gently fold it into the batter.
3. Pour the batter into a greased steaming tray or plate and steam for 10-12 minutes until firm and cooked through.
4. Allow it to cool completely, then cut into bite-sized pieces.
5. Heat oil in a pan and prepare the tempering.
6. Add the patra bites and toss gently until lightly crisp.
7. Garnish with fresh grated coconut and serve warm.
Tips
• Add the baking soda only just before steaming for the softest texture.
• Let the patra cool completely before cutting to get neat, clean bites.
• Toss the bites gently while tempering to prevent them from breaking.
