Saffron milk caps.
Such a good mushroom to cook with. Fried these with onion and garlic, then threw in pasta, parsley, olive oil and some toasted pine nuts. Nothing fancy, just letting the mushrooms do most of the work.
Definitely one of my favourite autumn finds.
As always with wild mushrooms, only pick and eat what you can confidently identify. Take what you need, leave plenty behind and be mindful of where you’re walking and what you’re disturbing. The habitat is more important than the harvest.
Anyone else finding many of these at the moment?

Ooh gorgeous. We love saffron milk caps but our one found patch only seems to grow a handful at a time. This looks sooooooo good!
