Y’all this is how locally grown persimmon will predict what kind of winter is coming. Farmers have used this for years. I really think it works. There’s something to be said about doing things the old way.

@eatsimmis persimmons. Y’all!!! It’s my new fav Fall fruit! I think I’m gonna keep a container of this persimmon purée in the refrigerator… You can use it for so many things. Here are the recipes- I hope y’all will try these persimmons. Available at most Sprouts, @heb and @wholefoods And go give them a follow on Instagram. Tell them we sent you. @eatsimmis

Purée
Two persimmons cut into small cubes
2 tablespoons honey
Lime juice from one lime
Water, enough to cover.
Place all this in a boiler and cook on the stove at a low simmer for about 15 to 20 minutes until the fruit is tender. Remove from heat. Purée this in a blender, make sure to let it cool down first, or use an immersion blender. Store in a mason jar.

Persimmon Cocktail
1 ounce bourbon or whiskey
2 ounces persimmon purée
Ginger beer
Splash of cranberry juice… Optional
In a cocktail glass filled with ice, pour in the persimmon purée, whiskey, and top with ginger beer. Add a splash of cranberry for color. Wow-this is good. Screams Fall

Salad Dressing
1/2 cup olive oil
2 tablespoons minced onion
1 tablespoon Parmesan cheese
1 teaspoon salt
3/4 teaspoon Worcestershire sauce
3/4 teaspoon dry mustard
3/4 teaspoon basil
3/4 teaspoon oregano
3/4 teaspoon sugar
3/4 teaspoon black pepper
1 tablespoon lemon juice
1/4 cup apple cider vinegar 1 cup persimmon purée

In a blender place the first 11 ingredients. Cover and blend until well incorporated. Next add the apple cider vinegar and the persimmon purée. Blend again until well combined. This should make about one cup of salad dressing. I keep mine in the refrigerator for at least a week. This is a strong dressing so a little goes a long way. Also if you use fresh herbs… Always add a little more.

Thank you to the folks at @eatsimmis for sending us some delicious Fuyu Persimmons! To be honest, I’m not sure I’ve ever had a persimmon before…but this won’t be my last!! Both Pam and I love chutney and after some research, this is what we decided to do!! This will definitely be on our holiday table! And this would make a great gift for the holidays too!! Y’all should definitely try this one!! @eatsimmis

Persimmon Chutney

1 tablespoon olive oil
1 small shallot, finely diced
1 jalapeño, finally diced
1 teaspoon ginger paste
Salt and pepper
1/4 teaspoon ground cinnamon
1 star Anise
1 t mustard seeds
1/4 c golden raisins
2 T brown sugar
1 T orange zest
1 T orange juice
1/4 cup of water
3 T champagne vinegar
2 c persimmon, peeled and diced

In a saucepan, sauté the shallot and the jalapeño in the olive oil. Add the ginger paste and salt and pepper. Sauté until slightly soft. Stir in the cinnamon, the Star anise, raisins and the mustard seeds. Then add the brown sugar, the orange zest and juice, and the water. Simmer for about five minutes. Add the champagne vinegar and let cook for a couple of minutes. Turn the heat down to low and add the persimmons. Cook for a couple of minutes and then turn off the heat. Let cool completely. Serve with crostini toasted with white cheddar cheese! Enjoy!!

Stop #2 on your girls trip to Tyler @handnurseries Karen Hand ,owner, treats her nursery like it’s her home- not a piece of anything out of place. And if you’re a person who loves color in your landscaper or home, well this is for you. She always offers the most gorgeous plant material for every season! Chocolate leaves -this is one of those things you can make ahead… Way ahead‼️They’ll come in handy when the rush of Thanksgiving 🦃starts. And y’all, get the offset spatula… @sweetgourmet_tx carries them and the melting chocolate wafers. You’ll wonder how you function without it. They also have the melting chips. Talk about EASY!! This recipe is for one of those days when you’ve got to get something in the table with as little effort as possible!! We all are looking for that in our lives!! Pam and I both love a good “open and dump” recipe and this one is so good! It would be great for Halloween night to have before you take the kids Trick or Treating!! And it freezes well!! Win win!!

Longhorn Soup

1 lb ground beef, browned and drained
1 can Veg-all, drained
2 cans Progresso Minestrone
1 can Rotel
2 cans Ranch Beans
1 can diced tomatoes
1 T Cavenders Greek Seasoning

Brown ground beef, remove most of fat. Add all other ingredients. If it’s too thick, you can add water or stock. Top with cheese if your choice!! Enjoy!!
