Sometimes things work out exactly like you want them to and this is one of those things!! I love a pretty salad! 🥗 Growing up, it was rare that we didn’t have a green salad with dinner. We often have salad at our house now, too. But this is salad in steroids!! And to say it was good…well, my husband said, MORE THAN ONCE, how good it was!! That’s saying something! Also…it’s black beans…not black olives.🤪🤦🏼‍♀️ But both would work!!🙌🏻🤷🏼‍♀️ I hope you make this!!
**Ranch dressing recipe is on @pamandlucyact2

Southwestern Cornbread Layered Salad

1 pan cornbread, crumbled
1 recipe Ranch dressing - recipe on @pamandlucyact2 (or you can use bottled or the packet prepared)

2 large tomatoes, chopped
1 can black beans, drained and rinsed
1 can Mexican style canned whole kernel corn, drained
6 slices bacon, cooked and crumbled
4-5 green onions, chopped

In a large bowl, layer lettuce, cornbread, tomatoes, corn, beans, onions and bacon. Spoon dressing over top. Repeat layers. Cover and chill!! Enjoy!!

⚓🇺🇸 Nantucket called…and she wants her dress back.

Our newest limited-release design is everything we love about an East Coast summer wrapped into one unforgettable dress—classic red, white, and blue, whales, iconic lobsters, American flags, and the timeless charm of Nantucket basket purses. ❤️🤍💙

This isn’t fast fashion. It’s wearable art designed to become part of your summer story.

✨ Only 18 dresses will ever be made.
Once all 18 are spoken for, this design is retired forever. No restocks. No second chances.

This is a PREORDER, so your dress is reserved especially for you before production begins.

Whether you’re headed to Nantucket, Cape Cod, the lake, a Fourth of July celebration, or simply want to bring a little coastal magic wherever you go, this is the dress you’ll reach for year after year.

Don’t wait until you see everyone else wearing theirs…because by then, they’ll all be gone.

Comment NANTUCKET or send us a DM to reserve yours before this little piece of Americana sails away forever. ⚓🐋🦞

Basil salt is so easy and @easleylucy has a great demo so I don’t have to do one! Right now I’m overrun with basil, including a lemon basil that was new to me this year. I’ll be using these easy instructions on repeat and Lucy is right, it makes great gifts! Happy Sunday! #happygardening #basilsalt #summerrecipes

Risotto with roasted Spring veggies is one of my favorites.🍄‍🟫🫛🧅(insert the asparagus emoji🤷🏼‍♀️). It can be a meal on its own or you can add roasted shrimp or chicken or beef. I’ve heard some people say it takes too much time…standing and stirring for so long. But for me, it’s one of my simple pleasures.😊 I enjoy the process of stirring and tasting(most likely in excess🫢) as I go while listening to music or visiting with friends and family. Cooking is my love language.❤️ I hope you try this recipe and enjoy the process and the result! We love it at the Easley home!🏠

Spring Risotto

1 lb asparagus(tough ends removed)
8 oz mushrooms (washed and stems removed)

Drizzle with olive oil and salt and pepper.
Roast at 425 on a foil lined sheet pan for about 20 minutes. Remove and dice. Set aside.

1 1/2 cups Arborio rice
6-8 cups chicken stock, warmed
1 small onion,diced
1/2 cup white wine
4 tbls butter(divided)
Salt and pepper
cup frozen peas
Juice of 1/2 lemon
1 cup Parmesan cheese

In a heavy bottomed cast-iron or stainless steel pan, melt 1 T butter and sauté the onion on medium low until they are translucent but not browned. Add 1 tablespoon of butter and your rice. Stir to coat the rice with the butter. Add your wine and stir and cook until most of the wine is gone. Now you’re going to start adding your stock two ladles(I use a small coffee cup) at a time. Stir and simmer until the stock is almost all absorbed…be sure you’re adding salt and pepper along the way. Keep adding your stock, as mentioned above, until the rice is cooked through. This is where the excessive tasting happens.😜 Add your veggies, lemon juice and the remaining butter. Finally stir in your Parmesan cheese. I cover and let sit for about 10 minutes with the heat off the stove. I also added fresh dill to mine just to make it a little more “Springy”. Enjoy!!
