Have you ever seen a beef heart? Eaten one? The theme of this nose-to-tail dining event—Every Cut Matters—invited us to look beyond steak, and other familiar cuts, to learn new ways of bringing the whole animal to our plate.

Thank you @richardsgrassfed and @goodmeatproject for hosting an inspiring evening of craft butchery, shared food and conversation on the ranch! Farm to table doesn’t get more local than this...

@paul_carras2 of Butchers of America (team USA) taught us about whole-animal utilization, chef @chefgregdesmangles served an inspiring menu highlighting lesser-known cuts and nutrient-dense organ meats sourced directly from @richardsgrassfed, alongside seasonal and locally-sourced ingredients and wine.

Resilient, regenerative and regional food systems are built on relaitonship—amongst ranchers, butchers, chefs, and eaters. As proud sponsors of the evening, we were honored to support a gathering that brings folks together around a shared meal to deepen our understanding of where food comes from, and strengthen our connection to the people who produce it.

A year ago today the Butchers of America celebrated not one but two first place awards for best beef and gourmet sausages in the world! The fact that these best of products were the only products that were cooked and eaten by the judges speaks volume. They were judged on taste, texture and aroma.

Even though we placed 12th place which is our worst showing so far, the team worked so hard to make it to Paris and compete on a world stage.

Last month I had the honor to speak at the California Farm Bureau"s annual meeting and state conference. It was so glorifying speaking in front of many farmers and ranchers who provide our food here in California. Thank you very much for the opportunity @cafarmbureau @aubreyaquinotv @corrin.armstrong by @paul_carras2

Great wild game season this year. Hope to butcher more California bears and out of state elk next year. It's always something new when it comes to cutting up wild game which is why I love it so much.

A hunter's request was a few cuts wrapped in caul fat. Pictured is a mule deer shoulder clod roast (cross rib)

Hunter requested bone in rib chops from his black-tailed deer. A lot of yield from this buck and the rib section was outstanding swipe👈

Been getting some really nice black tailed deer in lately. Pictured are neck bones, shanks, boneless neck and loin chops.

A week ago today this team of six butchers represented our country, trade and ourselves in an international competition held in Paris, France. We competed against some of the best butchers around the globe who were all also representing their own countries. Top notch performances by all countries and butchers who left it all out there on the floor. Congrats to everyone who competed and a huge thank you to my team who went on this journey with me. Love you team.

We cut as one tomorrow! This team has gone above and beyond to what it takes to be a strong and competitive team. The cohesion is unparalleled. The amount of time and effort they have all put into being on this team is astounding. So it's not good luck but go get em'!

A huge thank you to @f.dick_official They have been a huge supporter of myself and team U.S.A. since the beginning. They have exceeded more than a sponsor should have and shown us how passionate and loyal they are as a company. Thank you for everything! by @paul_carras2
