In celebration with #mocktober the team at Pegasus has designed The Designated Swizzle with fall and safe driving in mind. Our recipe features elderberry and mandarin. Check out the recipe below:

1 oz Elderberry Juice
1 oz Mandarin Juice/half a Mandarin
½ oz Tart Cherry Juice
½ oz Beet/Ginger Shrub* (or just Ginger juice)
Top with Ale81 or Kombucha of your choice

Shrub:
1 large piece of Ginger-do not peel
1 can of red beets
½ teaspoon Black pepper
½ cup of Mandarin Peels
½ cup of Apple cider Vinegar

Garnish with grated nutmeg, lemon zest and a slice of mandarin

**Grate ginger into pulp and place into food processor. Once pureed add the rest of your ingredients. Puree into ginger. Next add all ingredients to pan. Simmer all ingredients for 30 mins covered. Transfer into bottle, refrigerate after preparing.
