Hello! It's been a while since I popped up on here, these days I'm spending all my time making chocolate over @lumichocolate and that leaves very little time for anything else. But I thought I'd pop in and do a shameless plug for my Easter range which is currently available to pre-order, and will be shipping towards the end of this week. We've got a cute box of 6 hen-sized eggs in a real egg box (can't get more eco-friendly than that!), chunky egg shaped slabs with all sorts of delicious inclusions, and a few big eggs, which aren't on the site as they're too fragile to post, but are available by DM for local delivery (LU6 or SN16 postcodes).

I can't quite believe Lumi is 1 this month, it's been an absolute whirlwind and I feel as though I haven't stopped once during this whole year, but I guess that's to be expected juggling a start-up and two small kids. I had to take a snap of this stunning bowl of tomatoes at my friend's house yesterday, all grown in her greenhouse - isn't it beautiful?! Fortunately I took the pic before my youngest saw it and greedily demolished half of it 🙈
If you've got a glut of tomatoes and are looking for something to make with them, I'd really recommend the slow roasted tomato, chickpea, halloumi and French bean salad from my book The Vegetarian Kitchen. Slow roasting them for a couple of hours with garlic and a little olive oil intensifies their sweetness and turns them into jammy little flavour bombs.

I made my cavolo nero pasta sauce this evening with broccoli florets tossed through it. I'd forgotten about this sauce and hadn't made it in ages, but now I've remembered it's going back on regular rotation in our house, so quick, easy and delicious. Plus my kids think it's "spicy pesto" and eat it with gusto, so it's a win win! What to do with 2 pots of just-out-of-date-but-totally-fine cream, and 2 kids stuck at home with temperatures when we should be out enjoying the summer hols? Make butter! And then use the buttermilk to make soda bread. And then use the butter to replicate the smarties cookie that Luna saw (and to her great dismay, was denied) whilst at her swimming class last week. Zero waste, maximum smug, and a wholesome activity which then allows me to allow them to watch ten episodes back-to-back of Raa-Raa the Noisy Lion without the guilt.

It's been ages since I last posted. Trouble is I could barely keep up with one Instagram account in the first place, and now I have two, this one has really fallen by the wayside. Lumi Chocolate is going really well, but I've been so busy with huge wholesale orders and another big corporate gifting order, plus the heat of the last few weeks meaning some days were just written off as too hot to temper chocolate, it's been a real challenge. Throw in the fact that lately my children can't seem to go one week without getting ill, I can't remember the last time I had a working week that wasn't interrupted by at least one of my kids being at home for a chunk of it. Is anyone else finding their kids are sick all the time lately? We've had chicken pox, tonsillitis and scarlet fever in the space of 2 months, and now whatever this one is, I want to scream!

Just dropping by with a little food porn for your Friday...
An inevitability of my new chocolate business (@lumichocolate ) is the occasional bonbon which doesn't make it - whether it gets scratched or chipped or squashed while demoulding, occasionally they don't make the cut for selling. In the spirit of zero waste, I've been saving the rejects and playing around with baking them into brownies. I'd like to say these will last the weekend but I strongly suspect they won't see tomorrow...

Hello! I’ve been very quiet on here lately as I’ve been busy working on something quite exciting. Since I hung up my chef’s whites 5 years ago I’ve written my book which was an amazing experience, worked as a menu consultant for a hotel group and done a lot of freelance recipe development. It's been great, but for a while now I’ve been feeling like something is missing, and I think that something is having an outlet for my creations – I miss making things for people to actually eat! So, I’m taking a hugely exciting (yet terrifying) leap and starting my own business. Lumi Chocolate (@lumichocolate – please follow, share, and spread the word!) will be offering beautiful handmade chocolates, created first and foremost to be delicious, but with a real emphasis on sustainability, ethically-sourced cocoa, and biodegradable packaging. I feel really strongly about reducing the impact we have on the world around us, so that’s at the heart of this new venture. I want to create joyful, flavoursome and indulgent chocolates that everyone can enjoy, without being complicit in the exploitation of cocoa farmers, or creating unnecessary landfill.

The aim was to be launching in the first week of March, in plenty of time for for Mother’s Day, but I’ve been plagued by such a catalogue of disasters lately that it just couldn't happen (think, childminder handing in her notice 4 weeks before planned launch, new childminder breaking her foot in 3 places 2 days before re-scheduled launch, and then our whole family coming down with covid one day before - you couldn’t make it up!) So, this is a lot later than planned, but hopefully still in time to catch those of you who buy your Mother’s Day gifts at the last minute?! This month's Top Sante features my recipe for this delicious beetroot and horseradish quinoa risotto with an apple and walnut salad - it's lighter than a traditional risotto, and far more nutritious, but just as warming and comforting.

Theses puffed quinoa "cookies" are a really healthy treat for the festive season if you're trying to watch your sugar intake. They're made with no added sugar and all good things like pistachios, coconut, dried cranberries and puffed quinoa. They're also absurdly easy to make. If you'd like to try them, they're in the Christmas issue of Top Sante magazine, which is out now. @topsanteuk

This steaming hot, smoky black bean & butternut chilli is basically all I want to eat right now - it's so deliciously warming now that the temp is really starting to drop. Basically roasted butternut with a whole head of garlic (in foil, then squidged out) with onions, red peppers, black beans, tinned tomatoes and sweet corn. And the thing that really made it was a hefty spoonful of the @rootedspices "Brassica Blend" bringing such incredible flavour. I feel like a broken record, but I'm so impressed by these spices, I'm definitely going to be doing some of my Christmas shopping with them. Luckily I made a huge pan of this so I'll be eating it most of the week - with rice last night, probably in a jacket potato next, blitz some into a soup, then maybe eek out the last bits in a wrap with some avo and sour cream. #loveyourleftovers

The December issue of @topsanteuk is out now featuring this delicious Brussels sprout, apple and celery slaw with cranberries, pecans and toasted seeds. I know sprouts are divisive, but I like to think this salad would convince even the most ardent sprout-denier. It's fresh and light and really flavoursome with a delicious orange and maple dressing. Worlds apart from the bitter, grey, over-cooked monstrosities that often spring to mind when someone mentions sprouts!

I treated myself to some Turkish eggs for lunch, which are always delicious, but today I used @rootedspices "House Blend" to make the chilli butter, and it took them to the next level! It's a blend of Aleppo chilli, Urfa chilli, and sumac. The spices are so potent, it's an absolute flavour bomb.

If you haven't tried Turkish eggs, they're really delicious and so easy - it's basically just well-seasoned garlicky yoghurt, poached eggs, melted butter infused with chilli, and some dill. (And not pictured, but entirely essential, a pile of hot, buttered toast to scoop it up with). Get the yoghurt out of the fridge a good while before you want to eat, so it's room temp - otherwise it cools the eggs down too quickly.
