Vanuit Ihringen in Baden komt Ina naar Nijmegen en neemt ze haar wijnen mee voor een heerlijke lunch op 11 oktober, bij Stadskas Winsel! 🍇 Haar wijnen zijn biodynamisch en handgemaakt met een focus op de vulkanische ondergrond. Van hun 6,5 hectare grond gebruiken ze 5 hectare voor de druiventeelt, de rest staat vol met fruitbomen. De fruitbomen verzorgen de broodnodige schaduw in de zomermaanden, tussen oktober en mei grazen de schapen in de wijngaard. Hun wijnen worden in kleine oplages gemaak. Ook neemt Ina extra wijnen mee zodat je die kan kopen voor thuis. We serveren op deze dag een vier gangen lunchmenu met wijnen van weingut Wihler voor voor 85 euro per persoon. Of their 6.5 hectares of land, 5 hectares are dedicated to growing grapes, while the rest is filled with fruit trees. The fruit trees provide much-needed shade during the summer months, and from October to May, sheep graze among the vines. The wines are made in small batches, and Ina will also be bringing extra bottles for you to take home and enjoy. On the day, we’ll serve a four-course lunch menu paired with wines from Weingut Wihler, for €85 per person. PRODUCER PROFILE: WEINGUT WIHLER 🐑 We first came across @pinotnature in 2020, when we visited her winery in the picturesque town of Ihringen am Kaiserstuhl, a mountainous Pinot Paradise located in Germany’s southernmost Baden region and one of the warmest and sunniest places in the country. We wandered through the vineyards, tasted the wines from barrel and bottle in her cellar, and we were struck by her approach to winemaking: patient, thoughtful, loving and always letting Mother Nature lead the way. Ina and her husband Christoph are third-generation winegrowers on the Kaiserstuhl, where they farm around 6.5 hectares. Every vineyard feels like a little ecosystem: everything is farmed organically, with plenty of manual work, even more sheep and as little intervention as possible. No shortcuts, no chemistry, just healthy fruit and a whole lot of trust in nature. Their vines grow on volcanic rock with loess and you can taste it: loads of energy, solid structure and a serious sense of place. The cellar follows the same vibe. Spontaneous fermentations, no filtration or fining and long ageing on the lees. Ina loves to give her wines the time find their own rhythm. Nothing is forced or overworked. The result? Fresh, textured wines with loads of energy, terrific tension and an unmistakable streak of volcanic minerality. Whether it’s Weißburgunder, Grauburgunder or Spätburgunder, every bottle feels amazingly alive and they all have a tendency to disappear way too quickly. Needless to say, these are the kind of wines we get excited about: pure, vibrant and dangerously drinkable. Crack open a bottle of her gorgeous Grauburgunder Vulkan (with a hand-sprayed label made especially for us) or the ridiculously juicy La Brume and let her bottles do the talking. Unser gemeinsames One-Table-Dinner im Rahmen von Josefine Jegals @avec_fine Idee: „Gastgeberinnen in Wein und Gastronomie“ war ein sehr gelungener, wunderschöner Abend auf allen Ebenen. Wunderbare Menschen kamen zusammen um einen sommerlichen Abend mit positiven Vibes zu spicken, in unserem gemütlich-urigen & schattig-kühlen, kaiserstühler Winzerhof. Saisonal & regional abgestimmt, war die Kreation des Menüs. Die Erde erwacht aus dem Winterschlaf, das spüren auch die Weine in den kühlen Kellern. Jeder Wein hat sein Wesen, eigenen Rhythmus und atmet in seinem Tempo. Man hört, sieht und schmeckt die Entwicklung bei der Degustation im alten Bruchsteinkeller, in dem die Wände lebendig und erdverbunden sind. Bit Late but: There was Sun. Then Rain. More Rain. Only Rain. And after all there was sun again and tons of soils fully soaked by water. (Which in fact isnt bad if there are many greens around in every row ;) Loads of Love to a tricky 2025 and to all these wonderful perfect grapes or to stay real: there were some soaked and stucked berries, too. Anyway we received the advantages of regenerative organic farming of several years and through the well evolved soils! Lots of love to these special humans who ran with us through that harvest. Every Single DAY. Wine connects. That’s not just an empty phrase — it’s real. Through our mutual friends Fabi and Maike, we were introduced to Matti (@matti_allemand), a wonderful and kind human being and, unsurprisingly, a sommelier from the Freiburg area. Over the years he has made several exciting stops. After Berlin, he and his wonderful wife Freda moved to Aarhus, Denmark, where our wines were lucky enough to find a home base at @reduktivt. He is now pouring beautiful wines and menus at @restaurantlyst. Good luck to him — he really liked our wines and told me he would visit us the next time he was back home. And he did. We spent a great afternoon together. In autumn he returned again, this time with his lovely colleagues and friends Lasse (@lasse_oellgaard), Daniel (@daniel_ruijs), and his dad. I’m grateful for the opportunity to meet so many wonderful people over the years just through wine (wine is such a deeply meaningful and inspiring gift — I have to emphasize that!). It often feels as though we’ve known each other for 20 years or something.
