Hi, I’m Maren 🌱

It’s hard to believe it’s been about a year since I started this account. So, I thought it was time to reintroduce myself!

I’m the founder of Plantify My Plate and a Certified Plant-Based Health Coach. I help women make realistic and sustainable changes to their nutrition and lifestyle so they can feel better, have more energy, and take a more active role in their health.

But I don’t believe healthy living needs to mean perfection, restriction, or completely changing your life overnight.

My approach is about progress, not perfection. More plants, not more rules, and creating habits that actually fit into your real life.

Thank you for following along so far, I’m so grateful you are here šŸ’š

Fall produce to add to your grocery listšŸ‚

Fall is one of my favorite times to explore all the beautiful seasonal produce available!

From sweet potatoes and squash, to brussels sprouts, apples, and pomegranates, fall brings so many delicious opportunities to add more plants to your plate!

Different plant foods contain different combinations of fiber, vitamins, minerals, antioxidants, and phytonutrients. Eating a wide variety helps nourish your gut microbiome and provides your body with a broader range of beneficial nutrients.

Remember, healthy eating doesn’t have to be complicated. Sometimes it starts with simply adding a little more color and variety to your grocery cart.

Save this list for your next grocery trip🌱

Creamy, cheesy & completely dairy-free mac & cheesešŸ§€

Going dairy-free became so much easier when I stopped thinking about what I was giving up and started finding delicious plant-based alternatives to the foods I already loved. This one is creamy, comforting, high in plant protein and packed with fiber and it definitely satisfies that nostalgic mac & cheese craving.

šŸ§€ Cheese sauce:
• 1 cup salted cashews
• 1 cup nutritional yeast
• 1 tbsp garlic powder
• ½ tsp turmeric
• 1 tsp paprika
• 1 spoonful red miso paste
• ½ block (14 oz) silken tofu
• Juice of ½ lemon
• 1 cup water
• 1 cup soy milk

For the pasta I used:
• Chickpea macaroni noodles
• 1 cup frozen peas

Instructions:
1. Cook your noodles according to the package directions
2. Add all of the cheese sauce ingredients to a high-speed blender and blend until smooth and creamy
3. Add the cooked noodles to a pot and pour the cheese sauce over them
4. Simmer on low until warmed through, stirring occasionally
5. Mix in your frozen peas, serve, top with freshly cracked black pepper and enjoy!

You don’t have to give up the foods you love to eat more plants, you just have to find a delicious way to plantify them🌱

Save this one for your next mac & cheese craving!

If fall had a cozy little mocktail… šŸ‚šŸŠāœØ

Warm citrus, cinnamon, a little ginger, and KA! Kanna Tincture come together for the coziest little fall ritual.

I love this as an alcohol-free option when I want something special to sip on while still keeping things plant-powered

Plus, citrus provides vitamin C, ginger contains beneficial plant compounds, and the warm drink helps keep you hydratedšŸ‹šŸ«š

Interested in trying Ka? Check out the link in my bio!
Cheers to cozy season!

After a long hike there’s nothing better than sitting down to a hot and flavorful meal with a view like this!

So yes we were a bit extra and carried our burner and food packs instead of a squished PB&JšŸ˜‚ and it was so worth it!

We enjoyed the Everyday Dal and Vegetable Tikka Masala which were both vegan, packed with so much flavor, and were SO satisfying!

Thanks to @mayakaimalfoods for gifting us these meals!

Reasons to follow or unfollow me šŸ¤·šŸ½ā€ā™€ļøā¬‡ļø

1. I know plants have protein.
Beans, lentils, soy foods, peas, nuts, seeds, whole grains and even vegetables all contribute protein

2. I eat soy regularly.
Why? Because soy foods like tofu, tempeh, edamame and soy milk are nutritious sources of plant protein, and research supports including soy foods as part of a healthy diet

3. I break down plant-based myths.
There is SO much conflicting information about plant-based eating. My goal is to separate nutrition facts from fear, misinformation and outdated ideas so you can make informed choices.

4. I sometimes drink coffee on an empty stomach. Why? Because apparently I’m human and because you don’t have to follow every nutrition ā€œruleā€ you see on the internet.

5. I don’t believe in a one-size-fits-all plan.
Your food preferences, lifestyle, goals, schedule and relationship with food are unique to you. Your approach to eating should be flexible enough to actually fit your life.

6. I don’t track calories.
Why? I prefer helping people focus on the quality and variety of the foods they’re eating, along with hunger, fullness, satisfaction and overall habits, rather than making numbers the center of every meal.

7. I’ll listen before offering advice.
Why? Because I don’t want to tell you what you should be doing before understanding where you’re starting from. Coaching should be a conversation, not a lecture.

8. I’ll probably tell you to eat more fiber. Why? Because most people aren’t getting enough. Fiber supports digestive health and is found abundantly in beans, whole grains, fruits, vegetables, nuts and seeds.

9. I eat something chocolatey almost every day. šŸ«ā€ØBecause healthy eating doesn’t mean giving up the foods you love! I believe there is room for enjoyment, flexibility and yes… chocolate.

10. I’ll show you how easy & delicious plant-based eating can be. I want to help make plant-based eating feel simple, delicious, flexible and doable. That doesn’t mean perfection and it definitely doesn’t mean every meal has to be ā€œhealthy.ā€ It’s about the overall pattern.

🌱Which one resonates with you most?

🄯Tofu bagels with homemade tofu cream cheese

If you thought tofu was just for stir-fries… think again!

A recent study ranked tofu as the highest-scoring protein source when considering health, affordability/accessibility, and environmental impact! This is just another reminder of why I love incorporating it into my meals

Tofu is such a versatile plant protein, and I love finding creative ways to use it beyond the typical tofu scramble or stir-fry!

🄯 TOFU BAGELS:
• 1½ cups regular flour
• 1½ cups whole wheat flour
(or 3 cups regular flour)
• 1 tbsp baking powder
• Pinch of salt
• 1 block silken tofu

Mix everything together until it forms a dough ball. It takes a little work to bring the dough together, but you can do it šŸ’Ŗ

Cut the dough into 4 equal pieces. Roll each piece into a ball, lightly flatten, then use your finger to poke a hole through the center to create your bagel shape.

Bring a large pot of water to a boil and add about 1 tbsp of both baking soda and maple syrup. Boil the bagels for about 2 minutes on each side.

Remove from the water and brush the tops with olive oil. Dip into your favorite toppings, I went with everything bagel seasoning🤌

Place on a parchment-lined baking sheet and bake at 425°F for about 30 minutes.

Let them cool for at least 10 minutes before cutting into them!

TOFU CREAM CHEESE:
• ½ block firm tofu
• ½ cup salted cashews
• Juice of ½ lemon
• 2 small garlic cloves
• 1 tbsp apple cider vinegar
• Sprinkle of salt & pepper
• 1 tsp onion powder
• 1 tbsp nutritional yeast
• A few splashes of water, as needed

Add everything to a high-speed blender and blend until smooth and creamy. Add a little water as needed to help everything blend.

Once blended stir in fresh dill and parsley or whatever fresh herbs you like!

Spread that creamy goodness onto your homemade tofu bagel and enjoy 🄯🌱

And THIS is why I love tofu; it’s not just one food or one recipe. It’s a ridiculously versatile ingredient that can show up in so many different meals.

Save this one to try!
