Forty pounds of chicken

Learned a lot about smoking a tuna, because that was a last minute addition. Super tasty and at times a true challenge to preconceived notions on how good seafood should be made- liek don’t you want the raw sensation of sushi? But don’t you want a more even distribution of Smokey flavor? Will you lose the integrity of the fish’s essence?

When it comes to chicken- more Sichuan the better imo. Spice upon spice upon spice.

The kebab ended up being the most simplistic but definitely tasty with onion parsley salt and black pepper
