Easy Peach Cobbler
Ingredients

2 large cans sliced peaches in heavy syrup
½ cup dark brown sugar
½ cup granulated sugar
1 tablespoon cinnamon
1 teaspoon nutmeg
½ teaspoon lemon juice
2 teaspoons cornstarch
½ teaspoon vanilla extract
1 stick (½ cup) salted butter
2 cups complete pancake mix
Water, as needed to make a thin, pourable batter

Instructions

Preheat your oven to 350°F.
Prepare the peaches: In a pot, combine the peaches and their heavy syrup with the brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, cornstarch, and vanilla extract. Stir gently to combine and set aside.
Melt the butter: Place 1 stick of salted butter in a 9×13-inch baking dish. Put the dish in the oven until the butter is completely melted.
Make the pancake batter: In a separate bowl, combine the 2 cups of complete pancake mix with water. Whisk until you have a thin, smooth, pourable batter.
Layer the cobbler: Carefully remove the baking dish from the oven. Pour the thin pancake batter directly over the melted butter. Do not stir.
Add the peaches: Spoon the seasoned peaches and syrup evenly over the pancake batter. Do not stir. The layers will come together as the cobbler bakes.
Bake: Bake uncovered at 350°F for 40–50 minutes, or until the top is golden brown and the peach filling is bubbling.
Rest: Remove from the oven and let the cobbler rest for 10–15 minutes before serving.

God, I thank You for everything You’ve done for me this past year! I’m so grateful that You’ve blessed me to see another year of life. I know I wouldn’t be who I am or where I am today without You. Through every high and low, You’ve continued to guide me, protect me, and carry me.

I’m so grateful for another year of life, growth, blessings, and purpose. All glory belongs to You!

And to everyone who took the time to wish me a Happy Birthday, whether through a message, call, post, or in person THANK YOU! Your love, kindness, and thoughtfulness truly mean so much to me. I appreciate each and every one of you!

Love,
Tenia🤎 by @q_teecakes
