My name is Paddy, I’m the founder of Qatsi, and like many good stories, Qatsi began with a new perspective on an old passion.

For 15 years, I immersed myself in the wine industry as a sommelier. I loved the complexity and the stories behind each bottle, but the demanding late nights and the health impacts of alcohol eventually led me to seek a different path.

That path led me to a short stint in a horticulture course, where a fascinating discovery awaited: Camellia sinensis, the humble tea plant. It struck me almost immediately how similar it was to Vitis vinifera, the grape vine. Just like wine, all teas, from delicate greens to robust blacks, originate from this single plant. This revelation sparked a deep dive into the world of tea cultivation. I found striking parallels in how tea is harvested, cultivated, and the incredible diversity of varietals that emerge from one common origin. And this time, unlike wine, I could drink as much as I want and it’s actually good for me!

This initial curiosity quickly morphed into an all-consuming obsession with Japanese tea. Before I knew it, I was on a plane to Japan, eager to meet with tea farmers, taste as many different teas as possible, and absorb every piece of knowledge I could. The dedication of the farmers, the unique terroir, and the meticulous processes involved were truly captivating.

My journey to Japan solidified an idea: Qatsi. It’s my way of sharing that same enthusiasm and excitement with Australia. I believe Japanese tea is so much more than just a drink; it’s a world of excitement, fun, and intrigue waiting to be explored.

Through Qatsi, I invite you to discover the rich stories and incredible flavours of authentic Japanese tea, just as I did. by @qatsitea

BACK IN STOCK !

It is HEATING UP which means it is cold brew tea time. Also know as ‘mizudashi’ in Japanes which translates literally to “water extraction”, aka cold brewing.

These @hario_australia mizudashi 750ml bottles are perfect, easy to clean, come with a built in filter and look heaps cool.

Also restocked on the Hario glass Kyusu teapots, they have a nice wide open mouth and filter which helps the tea leaves unfurl nicely during the brew.

‘BILLI’ WAKOUCHA KOUSHUN

Adding to our wakoucha section is this absolutely unbelievable tea from Miyazaki Sabou. This is all first flush tea leaves made from the Koushun tea cultivar known for its medium bodied and floral jasmine notes. It is a wonderful cultivar that suits the style of wakoucha Ryo Miyazaki is making in Kyushu.
A stunning ruby red colour to the liquor that is alone just beautiful to look at, but the aroma of spices, cloves, cinnamon, ginger, and dried fruits like raisins and apricots really makes this tea stand out as a truly amazing brew.
The palate is just so luscious and deep, it has quince and dark fruit cake mixed with an undeniable milky texture, if you blindfolded me and said you added a dash of milk I wouldn’t be surprised. There’s also a delicious candied toffee apple thing going on, reminds me of when I used to have them as a kid. All finished off with a lingering satisfying tannin mouthfeel to put a lovely little oaky bow on the whole thing!
An awesome tea, and a new mainstay at Qatsi. by @qatsitea

‘SOPHIE’ SANNEN BANCHA

A specialty of Miyazaki Sabo, along with their Kamairi or pan fried teas, is this Sannen or 3 year aged Bancha.
In this instance the mature tea leaves are picked and then once pan fried are left to age for 3 years, once this aging process has completed the leaves are then roasted by hand over fragrant cedar wood.
As a result, this is an incredibly intense and interesting tea, truly for the bold and adventurous tea drinkers out there.
The leaves alone have a wild mushroom, umami driven, fish sauce aroma.
Once brewed the dark orange/brown liquor has this intense funky, dried porcini mushroom aroma, with red miso and dark soy.
The palate has a distinct tannic roasted mouth feel, a sweetness like caramelised butter and a tangy soy sauce saltiness, there’s this underlying texture that is reminiscent of almost yoghurt. It’s a truly fascinating tea that keeps on giving. by @qatsitea

‘SANDIE’ OOLONG MINAMI SAYAKA

When I visited Miyazaki Sabo Tea Garden, I had the great pleasure of tasting a selection of all Ryo Miyazaki’s teas in the beautiful tea house overlooking the tea fields in Gokase. One of these teas I tried was their incredible Oolong, or Uroncha, as it is sometimes known as in Japan.
I have been wanting to fit it into the Qatsi offering for the last year and finally got round to it.
This is a stunning example of a lightly oxidised, incredibly floral and refreshing Japanese Oolong. Ryo experiments with unique tea cultivars rarely used in traditional oolongs. This one In particular is the award winning Minamisayaki which is known for its distinct gardenia, milky vanilla and elderflower aroma.
Once brewed this tea has a wonderful chamomile characteristic to it, there’s dried flowers and a distinct milky element.
On the palate it’s a luscious vanilla bean, honeyed sweetness with that Taiwanese Milky Oolong style showing, but also a refreshing starchy edamame base to the tea.
It’s extremely well rounded and lends itself to a few infusions, bringing out that sweetness gradually as it goes.
An instant classic this one, definitely suits tea drinkers who like Taiwanese Oolongs with a refreshing floral, distinctively Japanese element. by @qatsitea

Choose Your Fighter 💥

A selection of the many different styles of Japanese Tea - all cultivated from the same plant, Camelia Sinensis!

Coming from a wine background working as a Sommelier, I’m always making connections with wine and tea.

Think of the different styles of tea like different styles of wine eg, white wine, rosé, orange, skin contact, light bodied reds, full bodied reds etc!

The different cultivars are like varietals, eg chardonnay, Malbec, Syrah, Pinot noir etc.

The origin of the tea and the farmer also play a huge part in then how the tea tastes, different regions specialise in unique styles of tea for eg the Mountainous region of Shizuoka is known for producing a distinctly aromatic and richly complex style of Sencha.
