After realising the potential in the pasta fruit salad concept from the previous reel, I set myself the challenge of making a legitimately delicious version of it. I decided spaghetti wasn’t the right move so pivoted to a nice short rigatoni, crunchy apple and sweet tinned pineapple made way for soft and juicy blackberries. Please, give this a go and send me the results! Let the summer of pasta fruit salad prosper. Recipe: Boil 100g rigatoni (slightly overcook) chill. Berries: 1 punnet blackberries (halved) Lemon zest + 10ml juice 30g sugar pinch salt few good cracks of good pepper (like @eat_pep) Toss till syrupy Egg mix: 6 yolks, 75ml limoncello, 30ml water, 100g icing sugar Whisk over double boiler till thick, cool. Cream mix: Whip 170ml cream+ 2 tbsp yoghurt Fold into egg mix. Fold in the cold pasta. Chill overnight. Add berries + 4 sliced basil leaves before serving. Finish with EVOO, pepper, more basil.
