The Sunday roast is a ritual most of Britain knows by heart. A bird in the oven, the table set, the afternoon built around it.

Roasting spiced meat, though, is not only a British idea. In Hadhramaut, the ancient region of eastern Yemen shaped by centuries of spice trade across the Indian Ocean, slow-cooked and heavily spiced meat has anchored the table for just as long.
