Last night at The Astorian in Houston, Texas, the room was buzzing with incredible chefs, beautiful food, and the unmistakable aroma of truffles in the air.
Late August was proud to compete at Truffle Masters 2026, bringing our Afro-Mex flavors to the table with Chef Sergio Hidalgo’s Truffled Duck Memelita, a truffled masa cake with mustard greens, whipped black-eyed peas, duck carnitas, salsa mora with truffles, and Truffle infused Duck Consommé.
About 300 bites later, the energy in the room was still electric.
Moments like this remind me why I love hospitality, creativity, collaboration, and sharing something special with the community.

Houston… why is nobody talking about this spot?? 👀
📍 Huncho’s Tacos
Tacos I ordered:
• Carne asada
• Pollo asada
• AND a ribeye steak taco
And let me tell you right now — that ribeye taco??
Yeah. I’m going back for that alone. 😮‍🔥
It’s attached to a gas station, but once you walk in, you’re in taco heaven. Don’t judge the location — judge the flavor.
Customer service was on point.
It was getting PACKED before I left.
I already know I’m coming back for the quesadillas.

🍝 If you love classic Italian comfort food, run — don’t walk — to Santa Barbara Italian Café in Pearland.
This place is one of my personal favorites when I’m craving old-school, no-nonsense Italian done right.
Everything we ordered was delicious — from the rich, hearty spaghetti bolognese, to the perfectly cooked seafood pasta, the Caesar salad, and don’t even get me started on the warm garlic bread with olive oil for dipping 🤌🏽
The portions are HUGE for the price, which is rare these days, and the food is consistently top-notch. It’s a quaint, cozy little spot that feels like a neighborhood gem.
Now I’ll be honest — the service can be a little hit or miss — but the food more than makes up for it.
If you’re in Pearland and want a solid Italian spot with great value and flavor, this one is worth the visit.

On my journey to 10k, just sharing real life today.
A beautiful lunch service, a full day at work, and one of those nights that reminds me why I love what I do.
If you haven’t been out to Late August, this is your sign.
It’s a tasting-menu restaurant where everything is carefully curated and made from scratch — from the food to the cocktails.
Chef Sergio Hidalgo is in the kitchen making things absolutely delicious, and the bar is crafting cocktails with just as much intention.
Come out, come eat, and come see me.

✨ A little holiday magic, Houston style ✨
Started the night at State of Grace—ordering almost everything (because why not?): hors d’oeuvres on repeat, steak, fish, lobster pasta, bread & butter bliss, and that French onion soup 🤌🏽 The vibe? Immaculate.
Slipped away to Bar Madonna for a cozy, Austin-esque escape—cute, intimate, and festive in all the right ways.
Then back to State of Grace to end the night with a perfect cocktail, great friends, and a little pre-Christmas cheer 🥂🎄
Good food. Good energy. Even better company.

✨ Second-Year Michelin Recommended ✨Still Pinching Myself ✨

I don’t think I’ll ever find the perfect words to describe what this moment means to me, but I’ll try.

Being part of a restaurant like Late August, and now celebrating our second-year Michelin Recommendation, is something I never imagined for myself. To be standing here, in this stage of my career, as the General Manager of a place with this level of heart, talent, and purpose… it’s surreal in the best possible way.

Working alongside Chef Chris Williams, Chef Sergio Hidalgo, and Chef Jen has been one of the greatest honors of my professional life. Their creativity, discipline, and dedication to excellence push all of us to bring our very best every single day. And the soul behind it all, the commitment to community, to culture, and to giving back through the 1913 Farm initiative is what truly sets Late August apart. This isn’t just a restaurant; it’s a movement with purpose.

I’m grateful for our staff, who show up with passion, pride, and heart. Every person here works toward one shared goal: to make every guest feel like they’re stepping into something bigger than a dining experience. At Late August, we want every guest to feel warmth, connection, and a sense of home, from the first greeting to the last bite. Every plate Chef Sergio sends out carries that intention, that love, that story.

To be part of a team like this, with so much vision and soul… I’m just beyond thankful. And I’m excited, excited for our growth, our future, and everything we’re building together. As a team, we’re speaking it into existence: our Green Michelin Star is on the horizon. 🌿✨

This croissant is on another level — buttery, flaky perfection loaded with sliced brisket, jalapeño cream cheese, strawberry jam, and a perfectly cooked egg.
The flavor combo is WILD. Sweet, smoky, spicy, creamy… everything just hits.

✨ Thanksgiving Vibes ✨
Soft moments, warm energy, and a heart full of gratitude today.
Started my morning at the beautiful Lancaster Hotel, then headed to the H-E-B Thanksgiving Day Parade with VIP access… even got to ride on a float with the Commissioner’s Office 🤍
Wrapped up the day with family time at my sister’s, lots of laughs, love, and everything I’m thankful for.
