Indigenous yeast report. 2018, 2019 & 2020🔬🤓 ⠀
⠀
Yeasts vary from vintage to vintage. When comparing 120 clones of yeast over a 3 year period, only 3 clones were found to be identical. Commercial dry yeast mitigates this effect by making the selected yeast the dominant strain each year. ⠀
⠀
An average of 40 to 50 ≠ yeast strain of S. Cerevisiaie. Each year we harvest ripe fruits with 11,5 -12,5 % alcohol. Previous studies in Champagne often call for a much smaller number most likely because unripe fruit was used for their fermentation. ⠀
⠀
Yeast travels! Commercial yeast IOC was found in a small proportion in our 2020 report, however this yeast was never used at our winery. It was most likely introduced on the shoes of our visitors during the harvest that year. ⠀
⠀
Commercial yeast are warriors! Even when used only during the bottling and 2nd fermentation, we can sometime find traces of DV10 in our fermenting wine during harvest the following year. ⠀
⠀
