Pierre Paillard Les Parcelles 2019 Pierre Paillard, a grower champagne located in Bouzy has quickly risen the ranks for my favorite NM producer. While they create many different cuvees, the Les Parcelles is their entry level wine, but for me, is the most attractive wine of them all. While easily available under the $100 mark, the level of quality, the completeness this champagne carries is unparalleled at this level. There are complex layers to this wine, ever so changing in the glass, while not being too exotic. The experience is pleasant all throughout, and even better, the quality of the cuvee is getting better each year. The nose consists of passion fruit, red apples, lemon curd, and a little bit of brioche that shifts into a caramel like sweetness, and the palate is easy going and not abrasive. The 20% Chardonnay really seems to balance off this wine nicely. 그랑크뤼 마을 Bouzy에 위치한 피에르 파이야는 작년부터 내 최애 NM생산자 중 한 명이다. 피에르 파이야가 생산하는 다양한 뀌베를 중에서도 소비자 입장에서 가장 매력적인 선택지는 Les Parcelles이지 않을까 싶다. 컬트 샴페인에 비해 수급 난이도도 낮고, 가격도 착해 한국에서는 싸게 사면 10만원에도 구할 수 있으면서도 완성도 하나 만큼은 가격을 아득히 초월하는 퀄리티를 선보이니 자주 찾게 된다. 맛의 레이어가 다채롭게 이어지며 좋은 샴페인에서 나야할 맛들이 다 잘 난다. 피노누아 샴페인으로 유명한 Bouzy 지역에서 생산됐음에도 20%의 샤르도네를 섞어서 밸런스를 잡아준 선택이 참 탁월한 것 같다. 지난 2달간 19빈, 20빈 합쳐서 6병이나 마셨는데 웬지 연말까지 12병을 채울 것만 같다. *Wine: Pierre Paillard Les Parcelles 2019 *Region: Champagne, France  *Varietal: 80% Pinot Noir, 20% Chardonnay *Reserve Wine: 80% wines from 2019, 20% reserve wine *Vintage Context: Champagne 2019, a legendary vintage with no faults. *Where: @taeha_seochon *Comment: Best Champagne under $100. *Score: 91+ Point #wine #champagne #pinotnoir #pierrepaillard LesParcelles

We are headed back to Champagne in two weeks! It has become a pilgrimage we look forward to taking at least once a year, so that we stay connected to the people and the place that inspire us and the program @nouvellewine This year we have the immense privilege to experience the harvest with some of our closest friends welcoming us into their homes for few days - @champagne_mousse @champagnegeoffroy @maisongamet @champagne.seleque @champagne_pierre_paillard @domaine_abergere @bereche_champagne_officiel Last night we popped one of my absolutely favorite vineyards / cuvées ever “Le Cran” 2012 from @raphabereche out our cellar. It was absolutely stunning, developing perfectly with age, showcasing pure elegance and depth! The wine reminded me why I preach that Champagne is not just the greatest wine in the world but simply put - THE GREATEST BEVERAGE IN THE WORLD! I am deeply passionate about this region which has largely consumed the majority of my personal & professional life for the last 10 years! P I E R R E P A I L L A R D —— One of the great privileges of Le Printemps des Champagne is being invited into the private world of some of Champagne’s most respected grower families. This year, brothers Quentin and Antoine Paillard, the new generation now leading Champagne Pierre Paillard, hosted an intimate Masterclass and lunch at the beautiful family domaine in Bouzy, alongside sisters Justine and Marie Charlemagne, the new generation shaping Champagne Guy Charlemagne. The day brought together two grower families, two villages and two expressions of terroir around one table (📷:4). We explored the 2025 vins clairs and the latest champagne releases: from the brothers, Pinot Noir from the Montagne de Reims alongside the sisters’ Chardonnay from Le Mesnil-sur-Oger, with thoughtful discussion around place, family heritage and the evolving and energetic vision of these producers. The lunch prepared by the new chef at Pierre Paillard was exceptional, but the most touching moment came later in the afternoon when the Paillard brothers’ grandmother, Maguy, arrived carrying old photographs and stories from decades past (📷:8-9). With Maguy smiling, her grandsons shared that she had once “dated” Justine and Marie’s grandfather as a teenager, a beautiful reminder of just how deeply intertwined the families and friendships of Champagne truly are. These are the moments that make Champagne so special: not only the wines, but the people, history and memories quietly passed from one generation to the next. These are not ordinary ciders, these are ciders with “grower champagne savoir-faire”🍎🍾🫧 @cidrerie_de_verzy is an exciting new project founded by five champagne growers who are good friends: Quentin Paillard @quentinpaillard Flavien Nowack @nowack Adrien Renoir @adrien_renoir Bertrand Lapie @bertrandlapie Antoine Bouvet @champagne_antoinebouvet   Organic and biodynamic apples and pears from 30- to 250-year-old trees grown locally in Champagne as well as Normandy are sourced.   The ciders are crafted based on the principles of champagne winemaking, rather than traditional cider methods: Fermentations in oak last for up to a year in their cellars in Verzy (a grand cru village in the northern Montagne de Reims), followed by 2nd fermentation in bottle, using natural sugar from apples and pear. The cider is then kept on lees for at least 12 months before release. October 17th, 2025 - Chicago, IL @mariscossanpedro @sarahtmarkman put together an epic little bottle share and welcome for @quentinpaillard on the @lafetenyc weekend. The food was soooo good that I didn’t get many pics as everyone just swarmed the dishes when they hit the table. Clearly @chef_oliverpoilevey / @chef_marcosascencio / @chef_antonioi96 know what’s up. Great night hanging with wine nerds and my old friend @yung.joe.pesci . Legacy is the mission of every family winery — spending the last decade in Champagne is witnessing so many growers entering this generational handover: bringing real progress and new energy. @champagne_pierre_paillard had long been one of the strongest names in Bouzy. When brothers @antoine_paillard and @quentinpaillard returned to take over, they released the 2019 vintage fully under their direction two years ago. It felt expected—but still exciting—to see them immediately elevate wines to another level, while launching a brilliant terroir-focused range of Blanc de Noirs and Blanc de Blancs. Before Printemps, they hosted a tasting at home and invited @ju_charlemagne and @marie_charlemagne from @champagneguycharlemagne in Le Mesnil-sur-Oger. The sisters returned to the family domaine in 2023 and began with vineyard restructuring, then moved through winemaking, packaging, and marketing—a full reset. Fortunately, the previous generation had already built wines of real quality, and never rushed to sell, so there are still many mature Blanc de Blancs resting in the cellar. We may need four or five more years before tasting wines fully shaped by the sisters, but their vision is already clear, decisive, and focused. it already feels inevitable that another exciting Blanc de Blancs house will rise in Le Mesnil-sur-Oger. 👯‍♀️ To end the day, the Paillard family’s 91-year-old grandmother drove over to see everyone, bringing old photographs and sharing how she had known the Charlemagne family grandfather for decades.
