Happy five years together! I recreated D & E's citrus and olive oil wedding cake for their anniversary, working from just one reference photo. 

They got married in New Orleans and moved to Chicago around the same time I did, so it means a lot to bake for them again and commemorate their special day. It was also such a special treat to work backwards and revisit this design in miniature size. by @radjoy.cake

Baking professionally didn’t teach me to take my time or practice patience. It taught me to make use of every second, rapidly multitask, iterate, and take risks. My worth literally became tied to this craft. 

Since stepping back, I’ve been slowly changing the studio. I used to solo bake hundreds of pastries in this space, and it meant so much to me. But now I want this space to give me peace. I want it to help me feel inspired to make without the pressure of bringing in an income or being “great”.

I hope you enjoy this quick and dirty reel I made. I wanted to share a glimpse of a beautiful moment in my own little café haven at home. by @radjoy.cake

King cake for breakfast! With tangerine, lemon oil, turmeric, espresso, cinnamon and a browned butter cream cheese frosting.

I’ve been working on king cake for years and finally arrived at something that I personally enjoy. By this time in winter, I am over warming spices and want something brighter, zestier on the palate. I also prefer a fluffy bread over a stringy or gooey texture.

The “best” of anything, but especially this, is so deliciously subjective.

That’s when I learned the original New Orleans King Cakes were more lemon-flavored, and the cinnamon-roll style is more contemporary. But who knows? So much is contested. The history of this pastry is rich and continues to fascinate me. by @radjoy.cake

Chè chuối, served warm. Who knew it would be perfect for winter?

Southeast Asian banana and tapioca pudding in coconut milk with crushed roasted peanuts and toasted sesame. Captured in the glow of overhead lights, scooped straight from the pot.

I used @hungryhuy’s recipe and made a few adjustments: reduced the sugar content by 10%, swapped out half the granulated sugar with palm sugar, cracked open a coconut for fresh shavings, and added a hint of jasmine to add a gentle and sumptuous aroma that goes so well with banana. I also added more salt because desserts love salt.

Reminds me of the snack shops back home that would serve this by the spoonful. I remember the dish being a little too sweet for my taste, the fresh coconut and palm sugar helped with that. by @radjoy.cake

Chè bắp with coconut cream. 

Made with gorgeous corn cob reserves I froze from late summer and supplemented with canned yellow corn kernels I had in the pantry. A bundle of lá dứa always adds a nice aroma and is pretty to look at.

I shared this with friends as a warm breakfast snack and we had it again as a room temp lunch dessert for a local road trip/hike in the fall. by @radjoy.cake

A banana cake with black sesame and vanilla cream cheese frosting, miso caramel, and toasted sesame seeds. 

As I lose strength in my grip and the ability to stand for long periods of time without pain, I remember that I can still make delicious cake. The techniques are pared down and the construction is simpler, but the final result was amazing and up to my standards.

More snacking and single layer cakes in the future! by @radjoy.cake
