Story of my transformation journey:

What started as a simple goal to lose weight has turned into one of the most rewarding changes I’ve made for myself. Being around 14 kg lighter feels amazing, but becoming stronger, more confident, and more consistent has meant even more to me.

I’m truly thankful to Aishwarya and the entire Livezy team for making this journey feel so comfortable and achievable. Her guidance, encouragement, and constant support have taught me that progress doesn’t require perfection, it comes from showing up, staying consistent, and becoming a little better every day.

I’m proud of how far I’ve come, grateful to everyone who helped me get here, and genuinely excited for a stronger version of me that’s still to come. This journey didn’t just change my body; it changed the way I see myself. 🤍

Crispy Soya Chilli

Recipe by @humbiharsehain

Ingredients:

Boil 60g raw soya chunks in hot water with 1 tsp salt until softened. Squeeze out all the excess water.

Transfer the soya chunks to a bowl and add:
1 tsp black pepper powder
1 tsp red chilli powder
1 tsp ginger garlic paste
Mix everything really well.
Now add 2 tbsp cornstarch and toss until the soya chunks are evenly coated.

Pop them into an air fryer at 200°C for 10 minutes, flipping halfway through.

Once they’re lightly golden and crispy, take them out and set aside.

Now let’s make the sauce!

In a bowl, add:
1 tbsp Schezwan sauce
2 tbsp soy sauce
¼ cup green chilli sauce
½ cup tomato ketchup
1 tsp vinegar
½ tsp salt
½ tsp cornstarch
50ml water
Mix everything really well until combined.

Now heat 1 tbsp oil in a pan on medium heat.
Add 8 finely chopped garlic cloves and 10g ginger. Sauté until fragrant.
Then add 1 finely chopped onion and sauté until lightly golden.

Now toss in:
1 chopped green chilli
½ diced onion
½ diced bell pepper

Turn up the heat and sauté until the veggies lose their raw bite but still have a nice crunch.

Now add the crispy soya chunks and pour in the prepared sauce.

Toss everything together and cook on high heat for 2 minutes until the sauce coats the soya chunks beautifully.

Finish with ½ handful of fresh coriander, give it one final toss, and it’s ready to serve!
