Deli-meets-diner, with just enough chaos to keep it interesting.

Ingredients

for the corned beef
• 1kg store-bought corned beef
• 2 bay leaves
• 1 orange, halved
• 1 onion, quartered
• 1 tbsp peppercorns
• water (to cover)

for the kraut mix
• 100g sauerkraut
• 50g red cabbage, finely sliced
• 30g dill pickles, finely diced

for the pastrami rub
• 2 tbsp black pepper
• 2 tsp coriander seed
• 2 tsp Szechuan peppercorn
• ½ tsp mustard seed

for the 1000 island dressing
• 2 hard-boiled eggs
• 1 cup mayo
• 2 tbsp ketchup
• 2 tsp white sugar
• 1 tsp lemon juice
• 1 tsp salt

to serve
• 1 large potato
• garlic butter
• Swiss cheese
• sour cream (optional)
• kraut mix
• hot sliced corned beef
• 1000 island dressing
• pastrami rub

Method

for the corned beef
Cover corn beef with water, bring to boil with bay leaves, onion, orange and peppercorns, reduce to simmer and cook for 1-1.5 hours per 1KG

for the kraut mix
Mix your favourite Sauerkraut with sliced red cabbage and finely diced dill pickles

for the pastrami rub
Toast and grind

for the thousand island dressing
rough chop the eggs and combine with mayo, ketchup, sugar, lemon juice and salt

SPLIT & LOAD
Garlic butter, Swiss cheese, Cabbage, Corned Beef, Thousand Island and Pastrami pepper. DONE.

Raph Rashid and I last spoke in 2020 when he was making Mean Cuisine and finding clever ways to keep people entertained at home. This time, he’s in the middle of something just as playful, but much more public: The Greatest of the Mall, a winter school holiday project with Melbourne Food & Wine Festival that sends him into shopping centres across Melbourne to create free, centre-inspired doughnuts. There was a milk tea brûlée doughnut at The Glen, pink lamingtons in Frankston, baklava cheesecake at Broadmeadows and matcha yuzu at Box Hill. But the real joy of this conversation is hearing how Raph thinks about shopping centres, food courts, local flavour and those small, sweet moments with family and friends that become much bigger memories than you expect.

It’s pink. It’s covered in coconut. It tastes like a lolly shop and a lamington had a very good idea together. A nostalgia trip and a fresh take all in one? Check, check and check.

SAMBAL SARDINE SPAGHETTI

one for my small fish squad

how it goes down
5-6 sardine fillets
Sambal
6 birds eye chilis seeds out
1 lil chunk ginger - 2cm ish
1 shallot
1 tsp prawn paste
pinch salt

6 garlic chopped
2cm piece tamarind soaked in 1/2 cup hot water
1/2 cup panko toasted in 2 tbs olive oil
1 tbs tomato paste
chuck of butter
soy sauce
