POSTS STORIES REELS TAGGED
@SceneEats: For years, Suzanne Zeidy and Rawah Badrawi had to argue that Egyptian food could fill a book. At Cairo Food Week, their book filled a museum.

Presented at the Grand Egyptian Museum, Tables of Egypt transforms ‘Egypt: Recipes and Stories from an Ancient Land’ into an immersive journey through the five landscapes that structure the 420-page volume: the Sea, Desert, River, Mountain and Cairo. A WHEN WE EAT concept powered by MARAKEZ, the exhibition brings to life years of travel through 14 Egyptian cities and towns, where the authors documented more than 150 recipes alongside the people, histories and places that sustained them.

Creatively developed by Hana Shash and designed by Ramzi Makram-Ebeid, five circular capsules pair Jonathan Gregson’s photographs - printed on papyrus - with contemporary artistic interpretations. Mohamed Mahdy, supported by Mai Eldib, responds to the Sea; Shahira Fahmy interprets the Desert and Cairo; Emma James follows the River; and Louis Barthélemy approaches the Mountain, with Ghada Dwaik shaping the exhibition through light.

For the opening, The Cookery Co. translated the five landscapes into canapés, while FR Studio’s The Table carried them into distinct tablescapes and Flower Power extended them through botanical installations. The book’s journey - from land to kitchen to page - was briefly reversed, allowing visitors to travel from page to landscape and, finally, towards something they could eat.

The result is both exhibition and homecoming - years of recipes, fieldwork and inherited knowledge returned to Egypt in physical form. Publishers once doubted that Egyptian cuisine could sustain a major book. Tables of Egypt reveals a country too expansive to remain inside one.

Tables of Egypt opened with a private viewing on September 25th and is open to the public at the Grand Egyptian Museum on September 26th and 27th.

Part social history and part field study, this mighty work expands the literature on food anthropology in Egypt. Divided into Sea, Desert, River, Mountain and Cairo, it's an archive of recipes and stories from across Egypt, covering Alexandria, Damietta, Port Said, Marsa Matruh (Sea); Siwa, Fayoum, Dakhla (Desert); Kafr El Sheikh, Minya, Luxor, Aswan (River); Mount Sinai and Saint Catherine (Mountain).

Thank you @suzannezeidy and @rawahbadrawi for your colossal work.

The book was beautifully shot by @jonathangregsonphotography, published by @nourishbooks, with illustrations by @louisbarthelemy, and is available online. taken in Athens by @rawahbadrawi

During the research phase for our book on Egypt I read ‘Around the Table’ by Diana Henry and found fascinating literature on the movement of foods with Arabs during the Islamic Conquest that explained much of the culinary heritage of the Egyptian Mediterranean coast. She has a quote in there that I loved so much I not only used it in our book I read it out to her last night in the Q & A following her lively talk with @roopagul in a packed @backstory. She describes her favourite food as those ‘other-worldly’ dishes stamped with Arab or Persian influence, ‘aromatic, perfumed or sweet-and-sour food, food that is marked with the decorativeness of the culture from which it comes.’

Now I can delve even deeper with her book ‘Crazy Water, Pickled Lemons’ - the perfect companion to October, when colder evenings make way for warmer more sensual food.

Thank you Diana and Roopa for the lovely evening and sweet welcome! by @rawahbadrawi

“For a tiny town in Upper Egypt, Esna has a bold and distinctly original culinary heritage.”

Authors Suzanne Zeidy and Rawah Badrawi wrote this in Egypt: Recipes and Stories from an Ancient Land following their visit to Okra, where they met the women of the kitchen and tasted Esna’s local dishes. They described them as “a brilliant cohort of Esna women” cooking “local classics at the traditional kitchen.”

We are honored to be part of the book and to have shared a taste of Esna’s culinary heritage with the authors.

Broke my dinner party rule number one: don’t cook something new when guests need impressing.

BUT I simply couldn’t resist the new Egypt cooobook by @rawahbadrawi and @suzannezeidy. We were introduced by @radikalkitchen at @ludlowfood, where we broke bread, quite literally. They shared their food and wine with me, we talked endlessly, and they very kindly sent me home with a signed copy of their beautiful book. And bought copies of mine!

It’s the sort of cookbook I love, one that transports you somewhere else, with stories and learning woven through every recipe.

So when my lovely friends and neighbours came round, I couldn’t resist. I made:

First, dukkah chicken with a glorious orange, coriander, fennel and sesame seed marinade, traditionally made with the Bigawi heritage chicken breed from Fayoum.

Then a courgette and onion tian, layered and baked, in the Dakhla ethos of organic vegetables take centre stage. My own careful layering of @suttoncommunityfarm veg was slightly derailed by time, but no one seemed to mind.

And I borrowed the dressing and vegetables from their bean salad to knock up an emmer grain side, then served the lot with homemade sourdough and @applebyscheese Abbey Farm butter, gifted to me at Ludlow by @_thehungryguy.

I love the way food connects us: from Egypt, via the Welsh and Shropshire borders, all the way back to my kitchen table in South London, with happy faces around the table at both ends.

Hope you enjoy learning more about the cuisine of Egypt as much as I am. by @rawahbadrawi

Suzanne Zeidy and Rawah Badrawi, the authors of the new book, Egypt: Recipes and Stories from an Ancient Land, believe that Egypt’s diverse cultural influences have created a rich culinary mosaic that is difficult to explain in just a sentence or two.

The two women, who are lifelong friends, were both published authors. Badrawi, who studied economics and history at Georgetown, had written a travelogue about Siwa in 2011. Zeidy, a trained chef and restaurateur who founded the iconic Cairene F&B outlets, including Cilantro, La Bodega, and Cairo Kitchen, wrote a cookbook called Cairo Kitchen in 2014.

Almost every recipe opens with what the authors call “mini nuggets of history,” explaining where a dish comes from or how it got its name. The authors also ensured that each recipe was accessible enough for home cooks. “I’m a home cook, so many of those recipes were tested out on me,” says Badrawi.
