It’s about the wires and the workers, the ebbs and the flows. It’s about managing the mess and, Spring after Spring, slapping a fresh new coat of white paint over it…

The reckoning around Noma has reopened an old conversation about labor, power, and culture in fine dining.

Most scandals follow a familiar script: identify the villain, assign blame, cancel someone, move on. That pattern rarely changes the deeper systems that produced the harm in the first place.

A process centered around restorative justice might ask different questions:

Who was harmed?
What do they need now?
Who is responsible for repair?
What must change so this doesn’t happen again?

Before signing up for divinity school at Harvard, I spent more than a decade working as a chef. One of the reasons I returned to school was to think more deeply about something I had begun to notice in kitchens: many people in hospitality carry complicated personal histories—trauma, instability, addiction, grief. The intensity of restaurant culture can sometimes mirror those dynamics in ways that are both powerful and destructive.

If we’re honest, the culture that produced this moment wasn’t created by one restaurant alone. Media, award systems, diners, institutions, and chefs all participated in building a prestige economy that often treated extreme sacrifice as the price of excellence.

Moments like this are painful, but they also create a rare opportunity to rethink things.
