It has already been 2 years since I last posted about a dish I cooked by myself. I got busy with lots of things. There are heaps of photos and videos of foods from my phone which I have cooked and baked that I already missed uploading. I was very thrilled to post them one at a time. I want to start them off with this iconic Filipino classic unbreaded fried chicken.

======================================

Max’s Restaurant fried chicken in the Philippines was one of my favorite chicken rankings next to Jollibee chickenjoy. 😋 I love Max’s version of fried chicken because it’s juicy, crispy and so delicious to the bones.🤤

I didn’t realize that it was very easy to cook this at home. 💯 Honestly, I can’t wait to see the finished product. That golden brown skin that reveals its juiciness! Ooh-lala then paired with a white steamed rice then dipped with your favorite banana ketchup.

Yummm!!! The meat is so tender and indeed flavorful because of its different blend of spices. You need to try this too.

In fact my hubby was not really a fan of Max’s Style fried Chicken but surprisingly he loved it. 😍😋🤗

I am happy to DM you the recipe so you can also experience this amazing taste.

Peace isn’t just about quiet moments. it’s about feeling calm and centered no matter what’s going on around us. It is about not allowing the situations outside us to control our emotions and feelings. Whether it’s dealing with work stress, navigating relationships, or just the ups and downs of life, cultivating peace helps us deal with things in a much calmer and positive way.

Today, I have a lot of things to be grateful to the Lord again.

𝑻𝒉𝒂𝒏𝒌 𝒚𝒐𝒖 𝑳𝒐𝒓𝒅,

…for the job despite the everyday genuine exhaustion physically and mentally that comes from the demanding work

…for giving me a spiritual maturity, for the patience and understanding towards others, rest assured I will keep on praying for them

…for the continuous safety, protection and health you provide to my children, to my family, to my partner and his family

Thank you Lord for giving me inner strength everyday to persevere through life’s trials. I will continue to stand firm in faith and find joy in Your promises. Your divine strength sustains me whenever I am weary. This will allow me to overcome challenges and encourages me to continue doing good works.

Lord, thank you for all the seen and unseen blessings . I will always choose gratitude. 🤍

Hi everyone allow me to share with you my short story. And, thank you in advance for my silent readers too! ✨

It was year 2005, when an old friend of mine introduced Coldplay to me. I bought their second album “A Rush Of Blood To The Head”. Three of my first favorite songs from them was The Scientist, Yellow, and Fix You then comes along more.

Undeniably, Coldplay captures millions of people’s hearts like me because their music explore themes of love, loss, pure hope, and redemption which is why it makes their music a source of comfort and relief to a lot of people. Not to mention, Chris Martin has indeed a magnetic appeal and was truly a humble frontman too. That is why I love them so much. 🫶🏻

They always perform spectacular and uplifting live shows and concerts all over the world. I am happy to witnessed it myself. It was totally 100% worth watching.

Upon hearing the news thay they will perform here in New Zealand, I already set aside a budget money to buy their ticket. I told myself I will never let this moment to pass again. Because in the Philippines, I can’t afford to buy their tickets more it was overly expensive. Instead, I will only watch them thru YT or FB after their show.🥴

Being a part of this “out-of-this-world experience was so unforgettable. I can’t help but to jump for joy, sing every songs they performed and kept having goosebumps while watching them. My happy emotions rised up especially when giant balloons, confetti, fireworks, and LED wristbands lit up and sync to every music of Coldplay. 🎈🎊

It was one of the best concert ever! No wonder it was a three sold-out shows. I am so grateful to be part of it! Thank you Lord.🙏🏻☺️

Who among you have tried singing the lyrics while reading the lines? 😅

Ever since I was a little girl, I always love singing. I remember I would always hear my mother playing different various of music from her cassette tapes. While, my grandfather or whom we called “Papang” would also play his favorite 60’s hits playlist from our antique turn table too. I admire the both because they also have a great taste of music. Which I also have appreciated as I grow older.

I have been surrounded with music all the time. My whole family especially my dad used to be a singer in his own band before. He has a wonderful voice. Also my eldest sister, she has a soft and lovely voice too. We used to sing together when we’re still young. I also admire her choices of good music. I remember most of the time we did song duets, I am the male and she’s the female. 😅 She’s one of the best.

I want to sing like the birds sing. Not worrying about who hears or what they think. Whenever I sing, I experienced a pure bliss with music.

I love music so much. I can even hear them playing in my ears. During my alone time depending on my moods. Music always gives me that sudden feeling of different emotions and I can even express myself very well with the help of singing. They say it’s a music but for me I considered it’s one of my therapy. 🙏🏻🎶

Take 2: HOMEMADE STEAMED CHEWY RICE CAKE (“Kutsinta”) 🇵🇭
=====================================

I will admit it to myself, the last time I made this Filipino kakanin before I failed to achieve the right amount of taste. The chewy texture was there, yeah it was not too sweet. But, it got bitter. 😝✌🏻 (it was bitter than you ex!!!🤣) I think I put alot of lye water it it.

But, since I am one of those Filipinos who loves to eat our kakanins. So, now I had my 2nd attempt, and it turned out perfect. The colour, texture, not too sweet most importantly the bitterness was not there!🤗

You can eat it even without the usual toppings of grated coconut or yema dip! Every chewy bite of it gets me feel at home in the Philippines.😢😍 Not to mention the Pansit Palabok I cooked to match the kutsinta. Ahh, what a nostalgia…💗

I truly hope you can try my very easy Kutsinta recipe too. Surprise your friends with this delicious Filipino kakanin recipe now!😉🇵🇭

Oh sooo happy I got time to post again! LOL 😅🙌🏻

Lemme tell you, rolling rice balls is a fun thing to do on anytime in your weekend!😋

Which is why this was my Part 2 of cooking palitaw. If you are looking for quick sweet treat, palitaw is the perfect answer for you.😉

======================================

When you’re out of your own country, I have realized that my cravings for my personal favorite Filipino dishes got more intense. You craved for eating them more. In other words you missed eating them.🥹

All the ingredients I needed for the palitaw was present except for the fresh coconut. So I had to use the frozen pack I bought from a Chinese store instead.

This sticky rice cake is filling and soooo delicious, with a perfectly soft and chewy patty coated with grated coconut, my homemade toasted sesame seeds, and sugar.🤤🤤🤤

I have been craving for some oven-baked fish since I came here in NZ. So, when one of our generous flatmate caught some huge red snappers, he immediately handed me this 1 huge piece. And, now we are feasting it on our lunch. #cravingssatisfied😋

This has been one of my fish specialty recipe. Especially my two boys!! It is very easy to do too. All you need is to pick your most favorite fish then rub it and stuff it with all your ingredients’ spices. And, lastly, put it in your pre-heated oven.

This oven-baked whole red snapper will surely light up your appetite! So savory-successful!!! 🫰🏻🙂
