Cruggle Meal: The ‘comfort struggle’ meal that doesn’t actually require any struggling.

Today, Kyle shows us HIS Cruggle Meal, Korean Egg Rice.

Ingredients:

- 1 bowl of cooked white rice
- 1 egg
- 1 tbsp soy sauce
- 1/2 tbsp sesame oil
- 1 tbsp Kewpie mayo
- 1 tsp sugar
- 2 tbsp cooking oil
- 3 tbsp Korean Seaweed Seasoning

Instructions:

- Mix kewpie mayo and sugar in small container, then add to cooked rice & mix
- Heat cooking oil on medium high pan
- Add egg to pan and fry until crispy and yolk remains runny
- Top rice with egg, drizzle soy sauce and sesame oil on top
- Add seaweed seasoning and mix

Baked feta… but soup.

This is the easiest broccoli soup you’ll ever make.

Ingredients:

- 5 cups broccoli florets, cut small
- 2 cups baby spinach
- 1 small yellow onion, quartered
- 4 garlic cloves
- 6 oz feta
- 1–2 tbsp olive oil
- 3 cups bone broth
- ½ cup cottage cheese
- 1 can cannellini beans
- Zest + juice of ½ lemon
- 1 tbsp dried oregano + 1 tsp chili flakes
- Salt & pepper to taste

Instructions:

- Preheat oven to 400°F.
- Cut broccoli into smaller pieces so they cook faster + roast evenly
- Toss the broccoli into an oven safe dish along with your onion, garlic, and feta. Drizzle with olive oil, add oregano, chili flakes, salt & pepper. Roast for 35-40 mins.
- Once roasted, add everything to a blender with the cottage cheese, bone broth, baby spinach, lemon zest + juice, and beans. Blend until smooth. Add water if too thick.
- Warm it up, add to a bowl and garnish with fresh dill, chili flakes, and finely shredded manchego or parmesan to bring out the flavors. by @recime.app

- Noodles (whatever type you like! I prefer wheat noodles)
- 2 tbsp peanut butter
- Spring onions
- 1/2 tbsp chili flakes
- 1 tbsp minced garlic
- 2 tbsp sesame seeds
- 1/2 tbsp chili oil
- 1/5 tbsp soy sauce
- 2 tbsp rice vinegar
- 3 tbsp neutral oil

Recipe:

- Place all ingredients except noodles onto a large plate and pour hot oil over it
- Add noodles and stir until sauce is well combined by @recime.app

Ingredients:

• ½ cup fresh parsley, largely destemmed & chopped
• ¼ cup fresh dill, chopped
• ¼ cup chives, chopped & extra for garnish
• 3 scallions, chopped
• 3 anchovy fillets
• 2 garlic cloves, microplaned
• 1 lemon for juicing
• ½-1 cup mayonnaise
• ½ cup whole Greek yogurt
• Salt and pepper to taste
• For serving: crunchy veg or chips (i.e. carrots, radishes, bell peppers, and salt & vinegar chips)

Recipe:

1. Combine herbs, anchovies, garlic and lemon juice in a food processor until the
mixture is a rough paste.

2. Add mayonnaise and yogurt to the food processor and blend until smooth.
Augment with salt, pepper, and additional lemon juice to taste.

3. Garnish dip with remaining chives.

- 1 cup milk
- 1 cup heavy cream

- 1 tbsp vanilla bean paste
- corn paste from 4 ears of corn
- 1/4 cup sugar
- 1/4 cup brown sugar
- corn kernels from 1 ear of corn

Corn caramel syrup:

- 2 tbsp butter
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/2 cup heavy cream
- 1 tsp baking soda
- corn paste from 1 ear of corn
- pinch of salt

INGREDIENTS

- 6 large eggs
- 6 tbsp warm water
- 1 tbsp sugar
- 2 tbsp Sherry vinegar
- 3/4 cup soy sauce

INSTRUCTIONS

1. Boil eggs for exactly 6 minutes & 50 seconds for a jammy yolk, then move straight to an ice bath for a few minutes.
2. While eggs cool, mix soy sauce, water, sugar, & vinegar in a bowl.
3. Peel the chilled eggs
4. Add the eggs to marinade, keeping them mostly submerged. Add a paper towel to the top of eggs aren’t fully submerged in liquid. 
5. Refrigerate at least 3 hours (overnight is better), turning occasionally.
6. Keeps up to 2 weeks. Eat over rice, noodles, ramen, salads, avocado toast - whatever your heart desires.

When life gives you lemons, make 3-Ingredient Lemon Flower Tarts! 🍋 🌸 All you need is store-bought pie crust, lemon curd, and powdered sugar to make these easy (and adorable) treats. Whip up a batch whenever you're craving a little lemony sunshine!

INGREDIENTS
- 1 sheet pie crust
- 1/2 cup lemon curd
- Powdered sugar, for dusting

METHOD
1. Roll out the pie dough and cut out flowers with a cookie cutter.
2. Press each flower into a mini muffin tin to form a shallow tart shell.
3. Bake at 400°F for 10 to 12 minutes, until lightly golden. Let cool in the pan for 5 to 10 minutes.
4. Fill each tart with about 1/2 tablespoon lemon curd.
