These long summer days call for easy meals that are both fresh and delicious. This is why I love Fresh Express salads! I love being able to throw together a quick salad and top it with my protein of choice. With the World Cup and July 4th coming up, I made this particular salad a little festive with strawberries, blueberries and goat cheese for a fun red, white and blue theme 🎉 This was perfect topped with a crispy chicken cutlet and a generous drizzle of balsamic dressing. To quote Dan: “we need to have this for dinner a lot this summer”. If you’re looking for a light, refreshing and most importantly, delicious summer meal, here it is: What you need: @tysonfoods panko breaded chicken breast tenderloins (I got these at Costco) or you could use a homemade breaded chicken cutlet or any other of your choosing Trader Joe’s burrata filling Sliced tomatoes, salted (always salt your tomatoes!) Capers (optional) Balsamic glaze or vinegar Trader Joe’s Lemony Arugula Basil Salad Kit What to do: 1. Cook your chicken cutlet based on package/recipe instructions. 2. While the chicken is cooking, prepare the salad. 3. Top the chicken cutlet with the tomato slices, burrata filling, capers, salt & pepper, and a drizzle of the balsamic glaze. You could also add some fresh basil on top too! 4. Serve with a side of the prepared salad. This meal is so simple and is basically just a slightly elevated version of a crispy caprese chicken. POV: It’s Wednesday, you’ve already had a WEEK, and it feels like it should be Friday. This is when you grab your girlfriends and head to The Charles for girl dinner. The spring specials at Hartford Baking Company have me feeling some type of way!
