Naughty little bweakfast tacos 🌮

No plans, no hangover, no chaos. Just coffee, cooking and standing over a cast iron pan making the easiest and tastiest breakfast tacos with a charred salsa. Well.. easy provided you don’t set off the fucking fire alarms.

The charred salsa is a game changer and very easy, just burn the ever living fuck out of your salsa ingredients and blend. this one started off slightly too watery, so naturally I strained it and ended up drinking the leftover liquid as it’s basically an unbelievably tasty gazpacho anyway.

Threw in a subtle flex on the blue belt.. Oss!

Few tunes, few tacos. Sound mate. Slow day cause I was up late last night in a dopamine hole researching seahorses. Mad little things them like.

Honestly though… fresh tortillas, crispy smashed sausage meat filling, fwied egg, smoky charred tomatoes/peppers/onion, loads of lime and coriander. Absolute filth.

Now probably sauna round 4, Elden ring and maybe researching a different aquatic creature.

Pineapple, Ancho-Habanero, lime hot sauce. 🍍🌶️

Honestly, mate this shit is fucking bangin’. Couldn’t even be arsed waiting for it to be bottled to make a reel.

Very sweet initially, with a nice mild-ish burn from the habaneros. Super bright, Smokey and punchy, would go really well with pork. Shame it looks a bit like poo because of the darkness of anchos 😂

March-July 2024 - Back in glorious England 🏴󠁧󠁢󠁥󠁮󠁧󠁿

Was away again.

Complete blur, doesn’t even really feel like any of this happened 😂 Made the most of this time, it’s been amazing connecting with pals and putting my body through hell. UK I miss you.

Managed a Hyrox (at 220lbs), Tough mudder, multiple long haul bike trips and a treacherous two day hike across rediculous Scottish terrain.

Made a wee broth 🍲🥔🥬🥓🧅

It’s getting a bit brass ootside so time to slap together a little broth that would ‘stick te yer ribs’ as me granny would say.

A little tattie, bacon and cabbage soup. Bloody tasty and wholesome. Featuring the most beautiful and perfect looking onion I’ve ever seen.

This one’s for people who like soup but don’t like pissing about in the kitchen.

Braised Cabbage. 🥬

This was the bollocks. Super impressed.
Slap your cabbage in a hot pan with some oil and get some caramelization going, two mins each side should be alright.

Smash them in the oven (365.F) for 12 mins.
.
Take them out and add around a half to one cup of chicken stock, couple cloves garlic, handful chopped parsley and 3 tablespoons of unsalted butter.
.
Spivvle that about until it makes a nice pan sauce and baste occasionally bathing ya lovely cabbage frens. Let the sauce reduce by half and serve up. Should be soft and juicy and rich.
