Every season at #CenturionNewYork, I invite a chef to join me for an evening, and last week we had the pleasure of welcoming three-Michelin-starred Chef Richard Ekkebus @rekkebus from @amberhongkong at @mo_landmarkhk.
Together, we prepared beautiful seasonal fall dishes, featuring Amber’s signature Aka Uni dish and celebrating the beginning of white truffle season.
Richard’s cuisine uses local, organic produce, as well as sustainably harvested seafood, and his vision is truly inspiring, blending French cuisine with the vibrant flavours of Hong Kong!
Congratulations, and thank you for such a great evening cooking together with our Executive Chef @rodrigocamposchef and Pastry Chef @jeanne.lecourt.

Amber’s whole thing is no butter, no cheese, but I still got that rich French flavor I’d been missing for so long. All the salty, savory notes were there—none of them missing.

The amuse bouche was next-level. It woke my palate right up. Even with one hand tied behind their back—no butter, no cheese—Chef Richard still served French food that was delicious and honestly moving.

Looking back on an incredible weekend with immense gratitude.

The Charity 18 Hands Lunch, pulled together in just seven days in support of the flash flood victims in Nepal, was a powerful reminder of what our hospitality community can achieve when united by purpose.

Together, we raised a significant sum for the Hong Kong Red Cross and its relief efforts.

This cause is deeply personal to me. The Nepalese community has long been the backbone of Hong Kong hospitality, and Nepal holds a special place in my heart as a country I have often returned to as a climber; majestic, humbling, and deeply inspiring.

My heartfelt thanks to all the chefs, restaurants, bars, wine and food suppliers, teams, guests, and friends whose generosity and support made this possible.

This is hospitality at its best: compassionate, united, and making a difference.

Hong Kong’s hospitality family came together at Three MICHELIN-starred Amber this afternoon for a 16-hands charity lunch bringing together top talent from across the city to give back to the Nepalese community—the warm, resilient backbone of our local dining scene. 100% of all proceeds will go directly toward urgent relief and long-term recovery efforts for flood-affected communities in Nepal.
